Abstract
PURPOSE: To prepare an easily handleable soy curd coagulant giving soy curd having excellent taste and appearance, by mixing dehydrated lactic acid with an easily vaporizable solvent for oils and fats, and cyclodextrin, removing the solvent from the mixture, and pulverizing the mexture.
CONSTITUTION: Degydrated lactic acid is prepared by the heat dehydration of concentrated lactic acid in the presence of a liquid oil under reduced pressure, and mixed with B-cyclodextrin and a solvent of the oil which can be removed by evaporation, e.g. ethyl ether, acetone, etc. The solvent is evaporated from the mixture, and the residual solid mixture is pulverized to obtain the objective coagulant powder. The powder is not acidic at first when dispersed in water; however, it becomes acidic gradually by the elapse of time or the temperature increase. The characteristic is most preferable in the manufacturing of soy curd. The amount of the coagulant is 0.2W0.25% (as lactic acid) of the soybean milk.
