Abstract

PURPOSE: To prepare an alcohol-containing sweet seasoning having excellent flavor and taste similar to "mirin" (a sweet sake used as seasoning), from low-cost raw materials, by liquefying wheat, barley, etc., or miscellaneous cereals, etc., and using the liquefied product together with alcohol and malted rice as the fermentation raw materials.
CONSTITUTION: Grains such as barley, wheat, rye, oat, etc., or miscellaneous cereals such as corn, foxtail millet, barnyard grass millet, kaoliang, etc., are heated, e.g. by steaming, boiling, etc. to effect the gelatinization of starch, denaturation of proteins, and disintegration of grain tissue. The heat-treated grains, etc. are treated with an acid or α-amylase, and digested until the liquefaction ratio reaches to ≥95%. The liquefied product is charged into a fermentor together with alcohol and malted rice, and saccharified and aged at e.g. 20W30°C for 10W20days. An alcohol-containing sweet seasoning containing 13W15% of alcohol and 45W50% extractive can be prepared from the above product by the conventional process comprising pressing, filtration, settling and separation of dregs, heating, and purification.
