Abstract
PURPOSE: To obtain an alcohol-containing sweet seasoning having a taste and quality comparable with that of a usual sweet "sake", by treating steamed nonglutinous rice with an acid or α-amylase to form a liquified matter, which is saccharified and aged together with alcohol and rice noodles.
CONSTITUTION: A steamed nonglutinous rice is treated with an acid, e.g., hydrochloric acid, sulfuric acid, or oxalic acid, or reacted with an α-amylase having its fittest reaction temperature of 50W90°C, or that having its fittest reaction temperature of 70W110°C so that not less than 95wt% of the rice starch is liquified. The prepared liquiefied matter is directly blended with (a) alcohol in an amount to make the alcohol concentration of the aged concentrated liquid of 13W15wt% and (b) 10W30wt% based on the raw rice of rice noodles, and, if necessary, grape sugar, a starch syrup, etc. The resulting blend is saccharified, aged, subject to filter press by a conventional method, and purified after removal of the deposit and sterization and destruction of enzymes under heating.
