Abstract

PURPOSE: Cubed "shiitake" mushroom is boiled in thick soy with sugar and its pieces are dispersed uniformly in a sweet bean jam, thus producing a new type of jam with a taste characterized by the flavor of "shiitake" mushroom.
CONSTITUTION: Raw "shiitake" mushroom is washed with water or dried "shiitake" is reconstituted by dipping in water and the water used in washing or reconstitution is stored separately. The shiitake is gradually boiled down with the same amont of sugar as the dried weight of the "shiitake" and a small amount of sweet rice wine. Then, the hard parts in the boiled-down "shiitake" are removed and the mushroom is cubed. The product is added to usual materials for sweet bean jam and the water used in washing or reconstitution also is combined. They are gradually stirred and kneaded under heating until they are boiled down to a sweet bean jam.
