Abstract

PURPOSE: To prepare a low-caloric Japanese and Western cake such as a custard pudding or sweet jelly of beans without the sugar harm, by pulverizing desalted wet seaweeds, and adding "Marbit ", sugar, etc. thereto at the same time.
CONSTITUTION: Water is added to desalted seaweeds, e.g. MOZUKU (Nemacystus decipiens) or WAKAME (Undaria pinnatifida), and pulverized to give a pasty state. "Marbit ", sugar and an adequate amount of water are then added thereto, and the resultant mixture is then heated and steamed. Agar as a viscosity increasing agent is added, and the mixture is boiled down while kneaded, molded and coagulated to afford the aimed product.
