Abstract

PURPOSE: To prepare the titled substance in high yield, by hydrolyzing a partially hydrolyzed starch with a soluble glucoamylase and a soluble α-amylase, and reacting the resultant hydrolyzate with an immobilized pullulanase and immobilized glucoamylase.
CONSTITUTION: A hydrolyzed starch, having a glucose equivalent of 10W30, and obtained from a starch of corn, potato, etc. is reacted in the presence of a soluble glucoamylase and soluble α-amylase at a pH of 4.5W7 to give a starch hydrolyzate with a glucose content of 20W85wt/vol% based on the total weight of saccharid. The resultant hydrolyzate is then adjusted to a solid content of 25W 55wt/vol% and then reacted in the presence an immobilized pullulanase at a pH of 5W7 and further in the presence of immobilized glucoamylase at a pH of 3.5W6. The immobilized enzymes are obtained by bonding pullulanase and glucoamylase to a granular gelatin with a polyfunctional crosslinking agent.
