Abstract

PURPOSE: To obtain a coating material capable of frying a tempura crisp with good oil draining characteristics, improved resistance to the teeth, melting in the mouth and adhesivity to the material, by adding a high-amylose starch hydrolyzed with an enzyme to a coating material.
CONSTITUTION: A high-amylose starch with a content of amylose ≥50% in the starch is hydrolyzed with amylase to a DE of about 2W20, dried, and pulverized to give a high-amylose starch hydrolyzate. The hydrolyzate thus obtained is then added to the well-known coating material consisting of wheat flour essentially. The amount of the hydrolyzate is 3W20wt% based on the coating material.
