Abstract

PURPOSE: In the last step of the production of cuttlefish torn into strips, i.e. the finish seasoning step, the polysaccharide from soybean is added to the cuttlefish, thus producing said product having soft and good texture and browing resistance.
CONSTITUTION: Cuttlefish torn into strips is usually produced through the process containing following steps: cutting of raw or thawed cuttlefish; washing with water; removing the skin from the flesh by dipping in hot water, and boiling; washing with water as well as cooling; primary seasoning and drying; agin, where it is finished into tumbling doll shape; secondary seasoning; roasting; milling with rollers to be torn into strips; finish seasoning and finish drying. At the last finish seasoning, 0.1W2.0wt% of soybean polysaccharide is added to the cuttlefish. The soybean plysaccharide is obtained by purifying, drying and crushing defatted soybean into a white to yellow powder, which is hard soluble in water but holds a large amount of water without gelling, thus lowering the influence of water on the stripped cuttlefish and improving the quality.
