Abstract

PURPOSE: To produce preliminarily boiled potato products for cooking capable of providing improved texture, color shade, and taste when being fried, by boiling potatoes to their cores below a temperature at which the removal of their surface texture will occur.
CONSTITUTION: Raw potatoes are cleaned, their skins are stripped, and these potatoes are cut into proper size if necessary. The resulting potatoes are boiled below a temperature at which the removal of surface texture will occur when untreated potatoes are boiled to their cores at the temperature, namely, below about 81W 83°C for about 5W45min. The boiled potatoes are heated in air at about 50W100°C for about 5W45min and undergo treatment for storage, e.g., freezing.
