Abstract

PURPOSE: Boiled rice is treated with an ethanol solution for dehydration and the resultant separated particles of boiled rice are frozen to produce frozen rice that can be readily thawed to return to boiled rice having a satisfactory appearance and taste because the restored rice is soft, full and glutinous just like directly boiled rice.
CONSTITUTION: Rice is boiled by a usual method and soaked in an ethanol solution of a prescribed concentration or an adequate amount of ethanol solution is poured to boiled rice to effect dehydration. After ethanol drainage, the resultant boiled rice is frozen with a usual freezer by a usual method.
