Abstract

PURPOSE: "Sake"-lees is divided into fine particles of α-form starch and coarse particles of non-α-form, the latter portion is ground into starch milk, which is mixed with the fine particle portion, then the mixture is hydrolyzed with an amylose, divided into solid and liquid parts and the liquid part is hydrolyzed into saccharides, thus producing malt syrup and rice protein.
CONSTITUTION: The starting material, "sake"-lees, is separated with screen 1 into the fine particle part and the coarse particle part. The fine part is sent to mixing tank 2 and the coarse part is soaked with a part of starch milk in soaking tank 3 at 40W45°C. The swollen coarse particles are ground in grinder 4 and made into starch milk by means of liquid cyclon 8 and thickener 9 and concentrated in concentrator 15. A part of the resultant starch milk is returned to tank 13 and the rest is mixed with the fine particle part in mixing tank 2. At the same time, an amylose is added the mixture and they are made uniform with disperser 16. Then, heating and staying are repeated to make the mixture completely syrupy. The liquid portion is separated from the solid portion with decanter 25, the liquid is sent to saccharifier 28 where it is converted into saccharides with a malt enzyme. The product is filtered and concentrated to give malt syrup and the solid product is dehydrated and dried to give rice protein.
