Abstract

PURPOSE: To collect the scent component of dried fish in high yield without using an organic solvent, by extracting a stock from a dried fish and evaporating it simultaneously, collecting the vapor as the scent component.
CONSTITUTION: Water in an amount 2W100 times as much as that of dried fishes (e.g., dried bonito, dried "Auxis thazard", dried macherel, etc.) is added to the dried fish or its extract residue. The extraction and evaporation of the component contained in the dried fish are carried out simultaneously at about 50W150°C using a rotary evaporator, etc., to give vapor, which is cooled and condensed, to give a concentrated solution of scent component.
