Abstract

PURPOSE: To prepare a fish-paste product like a paste having no taste, flavor and appearance of a fish meat, by adding butter or margarine and a natural paste to a smoked fish meat.
CONSTITUTION: A fish meat which is collected as a fillet is smoked, milled preferably by a silent cutter, mixed with 20W30wt%, based on the fish meat, butter or margarine and further milled, agitated under heating, and cooled under agitation and then mixed with a natural paste, e.g. sodium alginate or tragacanth gum, to give a pastelike product.
