Abstract

PURPOSE: A mixture of sorbitol and noncrystalline carbohydrates in a specific proportion is concentrated by boiling, cooled and combined with flavors, solidifed, thus producing title composition which can suitably used for beverage and food because of its high oxidation resistance.
CONSTITUTION: A mixture consisting of 60W90% of sorbitol based on the solid parts and 10W40% of noncrystalline carbohydrate as starch hydrolyzate or reduced starch hydrolyzate is concentrated at temperatures over 130°C under normal pressure to less than 6% water content and the product is cooled preferably to 40W75°C and flavors are added thereto at these temperatures. They are mixed and extended into thin layers under cooling to solidify.
