Abstract
PURPOSE: A roux with water content controlled in a specific range and a concentrated sauce made from vegetables and others are packed in a vessel without mixing, thus giving said condensed food that shows a desired viscosity after heat-treatd and has high storability for a long time.
CONSTITUTION: The starting ingredients mainly consisting of fat or oil or starch are homogeneously mixed by stirring under heating or not to control the water content to 5W15wt%, thus giving the roux. The resulting roux and a concentrated sauce obtained from vegetables, fruits, meat juice, flavors and others are packed without mixing in a vessel of heat resistance and air tithtness. The vessel is sealed and sterilized under a condition that the roux and the concentrated sauce keeps separated layers in the vessel. The viscosity of the concentrated sauce is preferably higher than 400cp and the use of flattened retort pouch as a vessel is preferred, since the conversion of the starch in the roux into the alpha form is hindered.
