Abstract

PURPOSE: To prepare a retort processed food having improved flavor, sense of eating and keeping quality, by incorporating an emulsion consisting of a vegetable protein, starch, oil or fat, and water in a raw material for heat processed food, enclosing, packaging and heat-treating the resultant mixture at a high temperature and pressure.
CONSTITUTION: A vegetable protein, starch, oil or fat and water are mixed at a weight ratio of 1:(0.3W5):(0.3W5):(2W10) to give an emulsion. The resultant emulsion is incorporated with a ground fish meat, edible meat or tissual protein or another raw material for heat processed food, sealed, packaged and heat-treated at a high temperature and pressure to give a retort processed food, e.g. fish paste product, hamburger steak, meat sauce or curry.
