Claims (1)
- 【特許請求の範囲】 1. 食物繊維含量を高めた食品組成物であって、食物繊維が、アミロース含 量が少なくとも約50%または米澱粉の場合には少なくとも約27%である澱粉 に由来し、および/または穀粒もしくはその部分であってその澱粉含量が、少な くとも約50%または米澱粉の場合には少なくとも約27%のアミロース含量を 有するものに由来することを特徴とする、食品組成物。 2. 澱粉のアミロース含量が55%以上である、請求の範囲第1項に記載の 食品組成物。 3. 澱粉のアミロース含量が70%以上である、請求の範囲第2項に記載の 食品組成物。 4. 澱粉のアミロース含量が80%以上である、請求の範囲第3項に記載の 食品組成物。 5. 澱粉のアミロース含量が85%以上である、請求の範囲第4項に記載の 食品組成物。 6. 澱粉のアミロース含量が90%以上である、請求の範囲第5項に記載の 食品組成物。 7. 澱粉が小麦、トウモロコシ、大麦、豌豆または米澱粉であり、および/ または穀粒もしくはその部分が小麦、トウモロコシ、大麦、豌豆または米である 、請求の範囲第1〜6項のいずれか1項に記載の食品組成物。 8. 澱粉がトウモロコシ澱粉であり、および/また は穀粒もしくはその部分がトウモロコシである、請求の範囲第7項に記載の食品 組成物。 9. 澱粉および/または穀粒もしくはその部分が約5〜60%の量で含まれ 、食物繊維含量が約1.5〜20%となる、請求の範囲第1〜8項のいずれか1 項に記載の食品組成物。 10. ヌードルを含み、澱粉が約24%までの量である、請求の範囲第9項 に記載の食品組成物。 11. パンを含み、澱粉が約5〜25%の量である、請求の範囲第9項に記 載の食品組成物。 12. パンがグルテンを含まず、澱粉を約15%までの量で含む、請求の範 囲第11項に記載の食品組成物。 13. 朝食用セリアルを含んでなる、請求の範囲第9項に記載の食品組成物 。 14. 朝食用セリアルがフレーク状のセリアルおよび押出したフレークから なる群から選択される、請求の範囲第13項に記載の食品組成物。 15. 朝食用セリアルの外観が、起泡し、弾けておりまたは膨らんでいる、 請求の範囲第14項に記載の食品組成物。 16. 食物繊維含量が約4.5%以上である、請求の範囲第15項に記載の 食品組成物。 17. 食物繊維含量が約12.4%以上である、請求の範囲第16項に記載 の食品組成物。 18. 食物繊維含量が約15.3%以上である、請求の範囲第17項に記載 の食品組成物。 19. フレークの形成中に生成した水分を含むペレットを一晩テンパリング し、その食物繊維含量を約17.5%以上とする、請求の範囲第18項に記載の 食品組成物。 20. 食物繊維含量が約20.7%以上である、請求の範囲第17項に記載 の食品組成物。 21. 朝食用セリアルが軽い空気の生地を有する「枕」の形態をしている、 請求の範囲第15項に記載の食品組成物。 22. 朝食用セリアルの食物繊維含量が約10%である、請求の範囲第21 項に記載の食品組成物。
