Abstract

PURPOSE:To provide a miniaturized band-like food production system designed to shorten its length by shortening the heating time for a device to heat a band-like food such as a pre-cut band-like intermediate product during the production process for crab-fashioned boiled fish paste. CONSTITUTION:This production system is made up of an electrode row 5 composed of plural roller-like electrodes arranged parallel with one another, a means to inject this row 5 with electric current, a driving means to revolve these electrodes, water-permeable films 35, 37 put on the row, and a means to continuously feed a food material 43 in a band-like fashion onto the films 35, 37. The band-like food material 43 fed onto the films 35, 37 is injected with electric current from the electrodes via these films and heated, after heated, the resultant food material 43 is cooled rapidly. Alternatively, the water- permeable films 35, 37 may be driven under traveling without driving the roller- like electrodes. Instead of the roller-like electrodes, plate-like ones may be used.

In the apparatus according to the first aspect of the present invention, the roller-shaped electrodes forming the electrode array are simultaneously rotated in the predetermined direction so that the water-permeable film hung on the electrode array is also run in the predetermined direction. It will be. If the viscous food material such as ground fish meat is supplied in a strip shape on the water-permeable film at one end side of the electrode array by the supply means,
The strip-shaped food material, while being placed on the water-permeable film, moves in the direction in which the roller-shaped electrodes are arranged as the water-permeable film travels. Here, since the viscous strip-shaped food material contains a large amount of water before heating, the water-permeable film is impregnated with water containing salt of the food material, and conductivity is imparted. Alternatively, the water-permeable film may be separately moistened in advance to impart conductivity. When a voltage is applied between the roller-shaped electrodes, a current flows from the roller-shaped electrodes through the water-permeable film to the strip-shaped food material on the water-permeable film, and heat is generated due to the electric resistance of the food material. In other words, so-called Joule heat is used for electric heating. According to such electric heating, heat is generated from the inside of the strip-shaped food material due to its electric resistance, so that the rate of temperature rise is remarkably faster than the case of heating with high temperature steam from the outside as in a conventional steamer. The time required for heating is also shortened. As a result, if the line speed is the same, the length of the heating equipment can be remarkably short. According to the experiments conducted by the present inventors, the time required for heating can be reduced to 1/2 or less as compared with a conventional general steamer, and as a result, the length of heating equipment can be reduced to half or less of the conventional one. It's known.

In the apparatus of the second aspect of the invention, the water-permeable film itself located on the electrode array is made to run in the direction in which the electrodes are arranged by the running drive means. Therefore, if a food material such as fish meat is supplied in a strip shape on the permeable film at one end side of the electrode array, the strip-shaped food material is placed on the permeable film in the same manner as described above, together with the permeable film. It will move in the direction in which the electrodes are arranged. Then, when a voltage is applied between the electrodes, a current flows from the electrodes to the strip-shaped food material through the water-permeable film in the same manner as described above, and the Joule heat is used to conduct heating.

Further, if the cooling means is provided as described in claim 5, it is possible to immediately cool the band-shaped food material which has been heated to a predetermined temperature by conducting electric heating. Here, the second water-permeable film 37 and the first water-permeable film 35 are impregnated with water from the ground fish meat 43, thereby imparting conductivity. In addition, when sufficient conductivity cannot be provided only by the water from the ground fish meat 43, for example, water or saline may be dropped onto both the water-permeable films 35 and 37 or one of the water-permeable films, or water may be added. Alternatively, a mist of salt water or salt water may be sprayed onto at least one of the water permeable films, or at least one water permeable film may be configured to pass through a tank containing water or salt water.

In the state where the first and second water-permeable films 35 and 37 are provided with conductivity as described above, among the roller-shaped electrodes 5A to 5H of the electrode array 5, the roller-shaped electrodes 5A, A high-frequency current applied by the power supply means 27 between the roller-shaped electrodes 5B to 5G except for 5H passes from the roller-shaped electrodes 5B to 5G through both the water-permeable films 37 and 35 to the second water-permeable film. It flows to the fish meat surimi 43 on 37, and the electric power which the fish meat surimi 43 has thereby heats the fish meat surimi 43 itself.
That is, electric heating is performed by so-called Joule heat.

According to the apparatus for producing a band-shaped food product of the present invention, the band-shaped food material itself, such as fish meat surimi, is heated by applying electric current so that the band-shaped food material is rapidly heated. Since the material can be heated and therefore the time required for heating is shortened, the total length of the equipment is significantly shorter than the conventional steamer using high temperature steam when heating while running the band-shaped food material continuously. Thus, the installation space of the equipment can be saved and the manufacturing cost can be reduced. Further, in the case of the invention of claim 5, since the belt-shaped food material heated electrically as described above can be immediately rapidly cooled, a good texture can be obtained particularly in a fish meat paste product.
