Description
酢酸発酵は、特に限定しないが、全窒素1.5〜2.0%、純エキス20〜30%、エタノール5〜15%、pH5.5〜6.5の発酵原液及び/又は水や果汁などによる希釈液が好ましい。また、酢酸発酵時に、卵殻、貝殻、炭酸カルシウム等のカルシウム含有物を加えて酸度及び/又はpH調整を図ることができる。
Claims (1)
- エチルアルコール水溶液の存在下で植物性蛋白質及び/又は動物性蛋白質にプロテアーゼ含有の醤油麹及び/又は原料として用いた魚の自己消化酵素を接触させて15℃で1ヶ月間、さらに30℃で1ヶ月間酵素分解してアミノ酸に分解したアミノ酸発酵原液をさらに酢酸発酵させてなる、総アミノ酸量が3,000mg/dl以上である飲料用食酢。
