Description

本発明は、飲食客側と厨房側を循環搬送する飲食容器循環搬送装置が配置され、使用済み飲食容器を飲食客側から厨房側に回収する回収装置に関する。

【従来の技術】
周知のとおり、無端状に形成された飲食物搬送用の循環搬送装置は、図5に示すように飲食カウンター等の飲食台に沿って設けられ、この循環搬送装置05に、例えば寿司などを盛りつけた寿司皿などの飲食容器を載置して厨房側エリア01内と飲食客側エリア02との間で循環搬送するようになっている。

この循環搬送装置05は、飲食客側エリア02と厨房側エリア01とが仕切られる隔壁03より、飲食客側エリア02に向けて3列に張出して並設状態で配置され、厨房側エリア01から飲食客側エリア02に飲食容器を搬送し、再び厨房側エリア01に戻すために厨房側エリア01内にも循環搬送装置05が配置されている。

一方、厨房側エリア01内には、無端状の搬送ベルトを用いた回収用搬送装置04が、厨房エリア側隔壁03の近傍に沿って配置されており、この回収用搬送装置04の搬送端部には取り出し可能な搬送終端部06が配置されている。この搬送終端部は、その具体的な構成は特に図示していないが、被搬送物が回収されるする部分すべてを意味し、回収槽である場合もあるし、洗浄槽である場合もあるが、これだけに限定されず、例えば被搬送物の流れをせき止めた貯留部であったり、人が直接被搬送物を取り出すことのできる回収用搬送装置の端部近傍部も含む。

そして、この循環搬送装置05によって飲食客側エリア02に搬送されて使用済みとなった飲食容器は、飲食台T01、T02上に残される。これら使用済み飲食容器は、店員によって直ちに回収されて隔壁03に形成されている複数の投入口07a、07bを通して回収用搬送装置04上に載置され、この回収用搬送装置04によって取り出し可能な搬送終端部で回収されるようになっている。

【発明が解決しようとする課題】
ところが、近年では回転寿司店舗も大型化される傾向にあり、店舗の大型化により飲食客側エリア02及び厨房側エリア01の面積が拡大し、収容客数の増加に対応するために、循環搬送装置05の搬送路が飲食客側エリア02に広範囲にわたって配置されている。

これにより、循環搬送装置05によって飲食客側エリア02に搬送される飲食容器の量が増加した場合に、この搬送量の増加に伴って増加する使用済み飲食容器を回収する回収用搬送装置04の回収能力を拡大する必要があるが、一つの回収用搬送装置04に対して一つの取り出し可能な搬送終端部06しか設けられていないため、従来の回収用搬送装置04では回収能力に限界があり、使用済み飲食容器の増加に対応可能な回収用搬送装置が要望されていた。

本発明は、このような問題点に着目してなされたもので、飲食客側エリアに搬送される飲食容器の量が相当量増加した場合でも、それに対応して使用済み飲食容器を効率良く回収することができる使用済み飲食容器の回収装置を提供することを目的とする。

【課題を解決するための手段】
上記目的を達成するために、本発明の使用済み飲食容器の回収装置は、飲食客側と厨房側を循環搬送する飲食容器循環搬送装置が配置され、使用済み飲食容器を飲食客側から厨房側に回収する回収装置であって、
前記回収装置は、前記厨房側の飲食容器循環搬送装置に沿ってほぼ水平方向に並列に配置された2列の厨房側回収用搬送装置から成り、使用済み飲食容器を前記厨房側回収用搬送装置に投入することにより回収することを特徴としている。
この特徴によれば、使用済み飲食容器が多い場合でも、厨房側の2列の回収用搬送装置で回収できるので、回収能力を上げることができる。

本発明の使用済み飲食容器の回収装置は、前記厨房側回収用搬送装置の少なくとも一方列側が複数の正逆駆動可能な搬送部で構成されていれば好適である。
このようにすることにより、使用済み飲食容器の投入量に応じて、一部の搬送部を停止したり向きを変えたりすることで、回収を効率的に行うことができる。

このようにすることにより、使用済み飲食容器が多い場合は、回収装置の両外端部に向けて搬送して、該両端部にて回収することで回収能力を上げ、使用済み飲食容器が少ない場合は、回収装置の一方外端部に向けて搬送して、該外端部にて回収し、他方の外端部では回収作業を休ませることで、使用済み飲食容器の回収を効率的に行うことができる。

【発明の実施の形態】
以下に、添付図面を参照して本発明の実施態様について説明する。先ず、図1は本発明の一実施形態としての厨房側と飲食客側を循環搬送する飲食容器循環搬送装置と、厨房側の飲食容器循環搬送装置に沿って配置される厨房側回収用搬送装置との関係を示す配置図、図2は図1のA−A断面図である。

図1において、1は厨房側エリアを示し、この厨房側エリア1は飲食客側の部屋である飲食客側エリア2と隔壁3によって仕切られており、飲食客側エリア2及び厨房側エリア1内には飲食容器循環搬送装置5が配置され、この飲食容器循環搬送装置5は飲食客側エリア2に張り出した張出し部5a〜5dを有している。

この飲食容器循環搬送装置5は、例えば、無端状のクレセントチエーンコンベヤで構成され、厨房側エリア1内で寿司などを盛りつけた飲食容器である図示しない寿司皿を載置して飲食客側エリア2側に連続的に供給されるものであって、4列の隔壁3とほぼ直交した張出し部5a、5b、5c、及び5dが所定間隔並列状に離間して配置され、搬送方向両側にはカウンターとしてのテーブルTがそれぞれ具備されている。

この飲食容器循環搬送装置5は、それぞれ張出し部5a〜5dの先端で折り返されて平行に配置され、さらにこの循環搬送装置5の一部が厨房側エリア1内に配置され、再び飲食客側エリア2に戻る循環ラインを構成している。

一方、厨房側エリア1内には、正逆方向に搬送可能な無端状の搬送ベルトを用いた一対の厨房側回収用搬送装置4a、4bが、互いに接近して厨房側エリア1の飲食容器循環搬送装置の下方に水平方向に並列に配置されており、本実施例の場合、これら回収装置の両外端部に向けて使用済み飲食容器を搬送し、飲食客側エリア2から遠い方の厨房側回収用搬送装置4aの搬送終端部4a’、4a”(X方向に搬送したときは4a’が終端部となり、X’方向に搬送したときは4a”が終端部となる)と、飲食客側エリア2から近い方の厨房側回収用搬送装置4bの搬送終端部4b’、4b”のどちらか一方あるいは両方側で使用済み飲食容器を回収する。使用済み飲食容器の回収量が少ない場合には、厨房側回収搬送装置の一方側だけ駆動したり、一方の搬送終端部4a’と4b’あるいは他方の搬送終端部4a”と4b”のどちらかだけから回収できるように後述する如く厨房側回収搬送装置を駆動することもできる。

飲食客側エリア2の飲食容器搬送装置5の張出し部5a〜5dの下方には4つの飲食客側回収用搬送装置(そのうちの1つ9bが図2に示されている)が配設されている。したがって、この飲食客側回収用搬送装置は、張出し部5a〜5dと同じように、隔壁3に対してほぼ垂直に延び且つ並列状に配置されることになる。図2には、この飲食客側回収用搬送装置の一つ9bが張り出し部5bの支持枠5b’内に収納されている。使用済み飲食容器Sはこの支持枠5b’に形成した投入口7より飲食客側回収搬送装置9bの端部に載置され、厨房側へと搬送される。

厨房側へ搬送されてきた使用済み飲食容器Sはシュート8を介してほぼ水平方向に並列に配置された2列の厨房側回収用搬送装置4a,4bのうち飲食客側エリア2より遠い列の回収搬送装置4aに再投入される。また、飲食客側エリア2と厨房側エリア1との間を仕切る隔壁3には、図1に示すように、相互のエリア1、2の間を連通する3つの投入口7a、7b、7cが形成され、これらの投入口7a〜7cは、支持台10に支持される一対の厨房側回収用搬送装置4a、4bの飲食客側エリア2に近い方の回収用搬送装置4bの上面側と飲食客側エリア2とが連通するように構成されている。

図2に示すように、厨房側エリア1内に突出した張り出し部5bの支持枠5b’の下方には厨房側回収用搬送装置4a、4bを収納した支持台10が配置されている。厨房側エリア1内に突出した支持枠5b’の上には店内の飲食客側エリア2を一巡してきた飲食用循環搬送装置5の戻り部分5xと、各張出し部5b〜5dを連絡する連絡部分5yとが互いに逆方向に流れるように接近して並設されている。

2列の厨房側回収用搬送装置4a,4bが共に駆動されていた場合は、厨房側回収用搬送装置4aの一方の搬送終端部4a’または4b’と他方の厨房側回収用搬送装置4aの搬送終端部4a’’または4b’’より、使用済み飲食容器は回収される。本実施例の場合、搬送終端部の先には、飲食容器を貯留できる回収槽6a、6bが示されているが、必ずしもこの回収槽6a、6bが必要であるわけではなく、搬送終端部4a’,4b’,4a’’または4b’’より直接人が図示していない洗浄槽に運んでもよい。

次に、飲食客側エリア及び厨房側エリアを循環搬送する飲食容器循環搬送装置、及び厨房側と飲食客側の回収用搬送装置の作用につき説明する。

図1及び図2に示されるように、飲食客側エリア2と厨房側エリア1を循環する飲食容器循環搬送装置5によって再び厨房側エリア1内に戻された飲食容器のうち、何回も移送されて新鮮度のなくなった飲食物を載せた容器は、厨房側エリア1内を搬送する過程で、支持台10に配置されている厨房側回収用搬送装置4aまたは4b何れかに載置され廃棄処理される。

そして、これらの使用済みの飲食容器は、店員によって片づけられて、隔壁3側から飲食客側エリア2に向けて張り出される4列の循環搬送装置の各列5a〜5d間にける隔壁3に形成されている最も近い投入口7a〜7cを通して厨房側回収用搬送装置4b上に投入されると共に、各張出し部5a〜5dの下部に設置されている飲食客側回収用装置(図2において9bのみ示されている。)に、支持枠(図2において5b’のみ示されている。)に形成した投入口(図2において7b’のみ示されている。)を通して使用済みの飲食容器が投入される。飲食客側回収用装置により搬送された使用済みの飲食容器Sはシュート8を介して厨房側回収用搬送装置4aに再投入される。

回収用搬送装置4a,4b上に投入された使用済みの飲食容器は、回収装置の両外端部に向けて搬送され、搬送終端部4a’,4b’,4a’’または4b’’より回収槽6a,6bに貯留され、その後洗浄槽等に運ばれて使用済みの飲食容器の回収が終了する。このように、使用済み飲食容器が多い場合でも、厨房側の2列の回収用搬送装置4a,4bで回収できるので、回収能力を上げることができる。なお、シュート8は厨房側回収用搬送装置4aに投入するために用いられているが、他方の厨房側回収用搬送装置4bに投入するときも、同じようなシュートを設けてもよい。

図3、図4は厨房側回収用搬送装置の各種形態とその搬送方向の関係を示した説明図であって、図3(a)は一方列側の回収用搬送装置が複数の搬送部で構成されているもの、図3(b)は一方列側の回収用搬送装置が短いもの、図4(a)は一方列側の回収用搬送装置が短く、しかも他方列側の回収用搬送装置が複数の搬送部で構成されているもの、図4(b)は両列の回収用搬送装置とも複数の搬送部で構成されているものが示されている。

図3(a)において、外側の厨房側回収用搬送装置は回収装置の両外端部まで搬送可能なように1本の長い搬送部20aから成り、内側の厨房側回収用搬送装置は2本の近接して配置した搬送部20b−1と20b−2から成っている。すべての搬送部20a、20b−1、20b−2は図において矢印の如く、左右どちらの方向にも搬送可能なようにモータ駆動されている。したがって、使用済みの飲食容器の回収すべき量が多い場合には、搬送部20aは該容器を回収槽6aへ運び、搬送部20b−1と20b−2は同方向に駆動して回収槽6bへ運ぶことが可能であり、使用済みの飲食容器の回収すべき量がそれ程多くない場合には、各搬送部の駆動方向を同じにして一方の回収槽6aだけあるいは他方の回収槽6bだけへ搬送することもできる。このように、使用済みの飲食容器の回収すべき量が変化しても対応可能であり、しかも搬送方向を変えることで使用する回収槽の選択もできる。

図3(b)は、外側の厨房側回収用搬送装置は回収装置の両外端部まで搬送可能なように1本の長い搬送部22aで構成され、内側の厨房側回収用搬送装置は1本の短い搬送部22bから成っている。これは時間帯や曜日により飲食客数に変動がある場合に対応できるようにしたものであり、客数が少ない場合は、図において右側の2つのテーブルTを使用しないようにし、投入口7a、7bを通して搬送部22bで使用済みの飲食容器を回収槽6bへ運び、張出し部5a、5bの先端近傍のテーブルT上にある使用済みの飲食容器は飲食客側回収用搬送装置より搬送部22aに運ぶようになっている。この場合、搬送部22aに運ばれる容器が少ないときは、回収槽6bのみに容器を集めるようにするとよい。このようにすることにより容器の投入や回収にかかる人的負担が少なくなる。

以上、本発明の実施形態を図面によって説明してきたが、具体的な構成はこれら実施形態に限られるものではない。例えば、実施例においては、隔壁3により厨房側エリアと飲食客側エリアを仕切った例で説明したが、隔壁によって完全に仕切られた場合にだけ本発明が適用されるのではない。すなわち、隔壁がない場合には、直接厨房側回収搬送装置に使用済み飲食容器を投入することも可能である。また、厨房側回収用搬送装置の搬送終端部近傍に回収槽を設けたが、直接飲食容器洗浄槽を設けるようにしてもよく、あるいは何も設けずに搬送終端部より手で運ぶようにしてもよい。更に、飲食客側回収用搬送装置の投入口を支持枠5b’の先端部に設けたが、サイドから投入できるようにしてもよい。加えて、回収用搬送装置の搬送部は厨房側、飲食客側とも2つ以上複数で構成するようにしてもよく、本発明の要旨を逸脱しない範囲における変更や追加があっても本発明に含まれる。
