Description
また、本発明の他の側面から、ウコン含有飲料におけるウコン色素の透明容器への色素沈着抑制方法を提供することを目的とする。
粉末ウコンを果実・野菜ミックスジュース(充実野菜 (株)伊藤園販売 pH3.88)に添加し、混合した。ウコンの添加量は、0.375、0.5、0.75、および2.63重量%とした。
粉末ウコンをうっちん茶および果実・野菜ミックスジュース(充実野菜 pH3.88)に添加し、混合した。ウコンの添加量はそれぞれ、0.05、0.375、3.75重量%とした。うっちん茶とは、ウコンの根茎を煎じたお茶である。
果実・野菜ミックスジュースを濾過した後にウコンを添加し、色素沈着の変化を調査した。
Claims (4)
- 0.01〜0.75重量%のウコン粉末を、食物繊維を含む不溶性成分を含有する野菜汁に添加することを特徴とする、ウコン含有飲料におけるウコン色素の透明容器への色素沈着抑制方法。
- 前記野菜汁の原料となる野菜がニンジンを含むことを特徴とする請求項1に記載の色素沈着抑制方法。
- 前記野菜汁に果汁がさらに混合されることを特徴とする請求項1又は2に記載の色素沈着抑制方法。
- 前記ウコンが添加された野菜汁を酸性に調整する工程をさらに含むことを特徴とする請求項1〜3の何れか一項に記載の色素沈着抑制方法。
