Description
a) 0.1重量%の重亜硫酸カリウム及び0.01重量%のクエン酸を含む水中に、2〜4時間、サトウキビを浸漬する工程、
b) 工程(a)で浸漬したサトウキビを洗浄し、それを圧搾して、ブリックス濃度18〜20°を有するサトウキビジュースを得、このサトウキビジュースを濾過する工程、
c) 工程(b)で濾過したサトウキビジュースの総固体含有量を、軟飲料水を加えることによってブリックス濃度10〜16°に調整する工程、
d) 工程(c)のサトウキビジュースを、0.1〜0.3重量%のクエン酸及び0.01〜0.03重量%のクエン酸ナトリウムを加えることによって酸性にする工程、
e) 工程(d)で酸性にしたサトウキビジュースに、0.05〜0.20重量%のジンジャー含油樹脂及び/又は0.01〜0.05重量%のライムとレモンの精油からなる風味配合剤を加えて、風味をつけたサトウキビジュースを得る工程、
f) 工程(e)の風味をつけたサトウキビジュースを混合し、それを90〜110℃下で、30〜180秒間低温殺菌して、風味をつけたサトウキビジュースを得、これを殺菌処理ユニットパックに充填する工程、
が含まれる。
サトウキビ(1.2トン)を入手し、根及び茎を刈り取って、1トンの汚れの無いサトウキビを得た。これを、KMS溶液中に2時間浸漬した。次いで、このサトウキビを徹底的に洗浄し、SSローラーをもつ二本ロールクラッシャーを用いてジュースを抽出した。500Lのジュース(ブリックス濃度20°)を得、これを、再循環設備をもつ冷却タンクに集めて、4℃に維持した。ブリックス濃度を、軟水(150L)を加えることによって15.4°に下げた。製品を解凍し、クエン酸(0.2%)とクエン酸ナトリウム(0.02%)を加えることによってpHを3.70に調整した。ジュースの総量は、650Lであった。pH及びブリックス濃度を調整した後、このジュースを、140バール下で、ホモジナイザーに、引き続いて殺菌器にポンプ輸送して、95℃下で、60秒間低温殺菌した。低温殺菌したジュースを、スチーム減圧室をもつ殺菌タンク内に貯蔵した。その間に、処理機器の充填部を過熱水で殺菌した。その後、当該ジュースを250mLの殺菌ユニットパックに充填した。
サトウキビ(1.4トン)を徹底的に洗浄して、外皮を掻き取ることによってワックス様の層を取り除いた。汚れの無いサトウキビの最終重量は1050kgであり、これを、KMS溶液に4時間浸漬した。サトウキビを流水で洗浄し、圧搾して、510Lのジュース(ブリックス濃度20°)を得た。このジュースを、軟水(160L)を加えてブリックス濃度15.2°に希釈した。これに、クエン酸(0.2%)、クエン酸ナトリウム(0.02%)及びプロピレングリコールに適当に乳化したジンジャー精油(70g)からなる風味配合剤(500mL)を添加した。このジュースを140バール下で、脱泡装置を通してホモジナイザーに、引き続いて殺菌器にポンプ輸送して、105℃下で、60秒間低温殺菌した。その後、当該ジュースを、250mLの殺菌ユニットパックに充填した。
1.2トンのサトウキビを入手し、根及び茎を刈り取った。このサトウキビを徹底的に洗浄し、外皮を掻き取ることによってワックス様の層を取り除いた。汚れの無いサトウキビを、KMS溶液中に4時間浸漬した。このサトウキビを、流水で洗浄し、圧搾して、約480Lのジュース(ブリックス濃度17°)を得、引き続いて軟水(55L)で希釈して、ブリックス濃度を15.2°に調整した。このジュースに、それぞれが0.2%及び0.02%の量のクエン酸とクエン酸ナトリウム、及びプロピレングリコールに適当に乳化したジンジャー精油(70g)と無テルペンライム及びレモンオイル(それぞれ7.5mL)からなる風味配合剤(500mL)を加え、これを、140バール下で、脱泡装置を通してホモジナイザーに、引き続いて殺菌器にポンプ輸送して、95℃下で、60秒間低温殺菌した。その後、当該ジュースを、250mLの殺菌ユニットパックに充填した。実施例3に係る物質収支は、図2に示されている。
Claims (6)
- 工程:
a) 0.1重量%の重亜硫酸カリウム及び0.01重量%のクエン酸を含む水中に、2〜4時間、サトウキビを浸漬する工程、
b) 工程(a)で浸漬したサトウキビを洗浄し、それを圧搾して、ブリックス濃度18〜20°を有するサトウキビジュースを得、このサトウキビジュースを濾過する工程、
c) 工程(b)で濾過したサトウキビジュースの総固体含有量を、軟飲料水を加えることによってブリックス濃度10〜16°に調整する工程、
d) 工程(c)のサトウキビジュースを、0.1〜0.3重量%のクエン酸及び0.01〜0.03重量%のクエン酸ナトリウムを加えることによって酸性にする工程、
e) 工程(d)で酸性にしたサトウキビジュースに、0.05〜0.20重量%のジンジャー含油樹脂及び/又は0.01〜0.05重量%のライムとレモンの精油からなる風味配合剤を加えて、風味をつけたサトウキビジュースを得る工程、
f) 工程(e)の風味をつけたサトウキビジュースを混合し、それを90〜110℃下で、30〜180秒間低温殺菌して、風味をつけたサトウキビジュースを得、これを殺菌処理ユニットパックに充填する工程、
を含む風味をつけたサトウキビジュースの保存方法。 - 前記工程(b)において、サトウキビが、圧搾される前に淡水で洗浄される請求項1に記載の方法。
- 前記工程(b)において、サトウキビが機械装置を用いて圧搾される、請求項1に記載の方法。
- 前記工程(b)において、サトウキビジュースがモスリン布を用いて濾過される、請求項1に記載の方法。
- 前記工程(c)において、サトウキビジュースが飲料水で希釈されてブリックス濃度15°に調整される、請求項1に記載の方法。
- 前記工程(d)において、サトウキビジュースが0.2重量%のクエン酸と0.02重量%のクエン酸ナトリウムを加えることによって酸性にされる、請求項1に記載の方法。
