Description
Claims (9)
- 水中に発生させたオゾンガスを含有する直径50μm以下の微小気泡を魚肉練製品の原料に添加する工程と、前記オゾンガスを含有する直径50μm以下の微小気泡の周囲を、前記魚肉練製品の原料中の組織でコーティングすることにより、前記オゾンガスを含有する直径50μm以下の微小気泡の寿命を持続させる工程と、前記オゾンガスを含有する直径50μm以下の微小気泡全体の一部に刺激を与え、前記オゾンガスを含有する直径50μm以下の微小気泡のコーティング殻を破裂させ、フリーラジカルを一時的に発生させることにより前記魚肉練製品を殺菌する工程とを有することを特徴とする微小気泡を利用した魚肉練製品の殺菌製造方法。
- 前記オゾンガスを含有する直径50μm以下の微小気泡を前記魚肉練製品の原料に添加する工程は、前記オゾンガスを含有する直径50μm以下の微小気泡を含む水を添加することである請求項1に記載の微小気泡を利用した魚肉練製品の殺菌製造方法。
- 前記オゾンガスを含有する直径50μm以下の微小気泡を前記魚肉練製品の原料に添加する工程は、前記オゾンガスを含有する直径50μm以下の微小気泡を含む水を霧状にして噴霧することである請求項1に記載の微小気泡を利用した魚肉練製品の殺菌製造方法。
- 前記組織は、前記魚肉練製品に含まれるタンパク質および脂質である請求項1に記載の微小気泡を利用した魚肉練製品の殺菌製造方法。
- 前記刺激は、前記魚肉練製品の原料の擂潰時に伴う擦り合わせである請求項1に記載の微小気泡を利用した魚肉練製品の殺菌製造方法。
- 前記刺激は、前記魚肉練製品の原料を高周波照射することにより行う請求項1に記載の微小気泡を利用した魚肉練製品の殺菌製造方法。
- 前記刺激は、前記魚肉練製品の原料をマイクロ波照射することにより行う請求項1に記載の微小気泡を利用した魚肉練製品の殺菌製造方法。
- 前記刺激は、前記魚肉練製品の原料を加熱させることである請求項1に記載の微小気泡を利用した魚肉練製品の殺菌製造方法。
- 請求項1に記載の前記オゾンガスを含有する直径50μm以下の微小気泡のコーティング殻を破裂させる工程後、前記魚肉練製品を加工し、包装する工程において、包装した前記魚肉練製品に前記刺激を与え、前記魚肉練製品中に含まれている前記オゾンガスを含有する直径50μm以下の微小気泡のコーティング殻を破裂させて前記魚肉練製品を殺菌する請求項1に記載の微小気泡を利用した魚肉練製品の殺菌製造方法。
