本発明は、洋風ソースの仕掛品等の液状食品の調製方法と、該方法において用いるための回転式遠心分離機に関するものである。特に、1kg程度あるいはそれ以上の量の液状食品を、工業的に調製するための方法及び装置に関するものである。

洋風ソースの調製方法の一例として、薄切にしたエシャロット、赤ワイン及びフォンを煮詰めたものをパッセ(漉す操作)して回収した液汁をベースとする方法が知られている。この種のソースとしては、ボルドレーズと呼ばれるもの等があり、回収した液汁はサンクリストフと呼ばれ、各種の料理に用いられる。上記のパッセ処理は、シノワと呼ばれるステンレスの極細目の網目を通して漉し、ヘラ等で押して、エシャロットに含まれている液汁が完全に回収されるようにして行う。同時に、可能な限りエシャロットの繊維が液汁に入らないようにして漉す必要がある。以上は、主にシェフが厨房でソースを調製する場合の方法である。

一方、これらの洋風ソースを工業的に調製するためには、同じようにパッセ(漉す操作)をする場合に、大型の濾過装置を用いることが考えられる。この場合の方法としては、液汁の回収率を高めるために、煮詰液に圧力を掛けて漉す方法、例えば、濾材を備えたシリンダーとピストンからなる圧搾式濾過装置を用い、煮詰液をシリンダーに入れ、ピストンに荷重を加えて圧縮脱水する方法、他に、内壁に濾材を設けた有孔回転体を備えた回転式遠心分離機で遠心分離する方法等が挙げられる。

本発明は、前記の工業的方法の有する欠点、つまり煮詰液に含まれる固形物の残さが、濾材の内面に付着して取除けないという欠点を解消し、良好にパッセ(漉す操作)を実施することができる、工業的な液状食品の調製方法と装置を提供することを目的とする。

本発明者らが種々試作実験を行った結果、前記の煮詰液を回転式遠心分離機で遠心分離する方法において、遠心分離機に特定の布厚の合成樹脂製の織布からなる濾材を設けることにより、所望の目的が達成されることが判明した。つまり、上記の場合に限って、野菜等の固形物に含まれる液汁を完全に回収して、同時に、固形物に含まれる繊維が回収する液汁に入らないようにすることができ、更に、濾材の内面に付着した固形物の残さを容易に取除け、このための作業時間を短縮し、再生した濾材を反復使用することができる。したがって、シェフが調製する場合と同様に品質機能面に優れ、かつ工業的生産性に優れた液状食品の調製方法及び装置を提供することが可能となる。

本発明は、斯かる知見に基づいてなされたもので、細断した野菜類及び/又は果実類を固形物として含む液体を煮詰め、煮詰液を漉してこれに含まれる液汁を回収して液状食品を調製する方法において、煮詰液を、内壁に布厚0.5〜1.3mmの合成樹脂製の織布からなる濾材を設けた有孔回転体を備えてなる回転式遠心分離機で遠心分離することにより、液汁の回収を行うことを特徴とする上記の調製方法、である。

【発明の実施の形態】
以下本発明を詳細に説明する。
先ず、本発明において使用する回転式遠心分離機について説明する。図1は、回転式遠心分離機の一実施例を示す縦断面図である。
円板状のハウジング1は、上面が開口し、底壁に設けた孔に液汁回収管2が繋げられる。3は、ハウジング1の上面開口を塞ぐ蓋である。ハウジング1内には、中心に設けられた回転軸4に、上面が開口した円板状の有孔回転体5が同心状に設置される。回転体5は、図示しない駆動源により回転軸4を動かすことで回転される。7は、回転体5の上面開口を塞ぐ蓋で、設けない場合もある。
有孔回転体5の側壁及び底壁には、径が5〜20mm程度の孔が設けられる。回転体5の底壁の内面は、図示のように、周縁部より回転軸4側に円錐状に盛り上がる形状とすることができ、該円錐の底壁周縁部に近い部分は傾斜を緩やかにしてもよい。回転体5の材質はステンレス等がよい。ハウジング1及び有孔回転体5の大きさは、大凡前者が内径200〜500mm、高さが150〜450mm、後者が内径100〜300mm、高さが60〜160mmとすると、1kg程度あるいはそれ以上の量の液状食品を、工業的に調製しやすい。

ここで、液状食品とは、細断した野菜類及び/又は果実類を固形物として含む液体を煮詰め、煮詰液を漉して回収した液汁を指す。この構成を満たす任意の液状食品が含まれ、前記例示の洋風ソースの仕掛品や、ブイヨン・ド・レギューム、クール・ブイヨン等が含まれる。液状食品の原料となる上記固形物と液体は、求める液状食品に応じて適宜選択して用いればよい。尚、固形物は、1〜5mm程度にスライスするか、3〜10mm程度に角切りしたものがよく、磨砕物でもよい。固形物と液体との比率は、前者1質量部(以下部と略称する)に対して、後者2.5〜12部とするのがよい。液体は2000〜5000g用いるとよい。煮詰液は、原料100部より35〜60部まで煮詰めるのがよい。これらの構成により、良好に煮詰液より液汁を回収し、かつ、容易に濾材から固形物の残さを取除いて、濾材を再生利用する機能効果が更に円滑に達成し得る。

上記の固形物を含む液体の煮詰液を、回転式遠心分離機の有孔回転体5内に供給し、蓋3及び7を閉じる。次いで、回転体5を回転させて、遠心分離により液汁を回転体5の壁面を通して外部へ放散させて回収する。液汁は、ハウジング1より液汁回収管2を通して回収する。ここで、遠心分離の条件としては、有孔回転体5の回転数2000〜4000rpmで、3〜15分間とすると、良好に煮詰液より液汁を回収できるのでよい。

本発明の方法により、野菜類等の固形物を含む煮詰液を漉して、これに含まれる液汁を、繊維等を混入させず、かつ高い回収率で回収することが可能となる。更に、濾材に付着した固形物の残さを容易に取除いて再生利用し、円滑に次の回収操作に移ることが可能となる。したがって、高品質の液状食品を工業的に調製することができる点で極めて有用である。
