上記結果から、ニンジンペースト以外の野菜を用いたシート状食品にエノキダケペーストを使用した場合でも、食味や使用感に優れたシート状食品の製造に効果を示すことが分かった。
また、果物を活用した例としてリンゴをペースト状に加工したものについても同様の試験を行った。果物はかぼちゃ同様に糖度が高い原料であり、リンゴペーストのみでは乾燥時にひびが入ってしまうような現象が見られたが、エノキダケペーストを添加することで乾燥時のひび割れがなくなり、シート状への成型が可能となった。
When only the pumpkin paste was used (Comparative Example 7), when the sheet was molded, the surface was cracked and the sheet could not be molded (FIG. 8). On the other hand, when 20% by mass of the enokitake paste was added (Example 10), it became possible to mold the food into a sheet-like food having a smooth surface (FIG. 9) and excellent strength and plasticity. Similar results were obtained for corn and potatoes as for pumpkins. Further, in the case of only the onion paste, although it can be processed into a sheet shape, the strength is insufficient, and there is a tendency that it cracks when bent (Comparative Example 5). Spinach paste alone had poor plasticity and was difficult to use for scrolls (Comparative Example 4). In response to this result, by adding the enokitake paste, the effect of imparting strength by the binder effect to the sheet-shaped food using onion and the effect of imparting plasticity by the film-forming ability to the sheet-shaped food using spinach are effective. Appeared (Example 8, Example 7).
From the above results, it was found that even when enokitake paste is used for sheet-shaped foods using vegetables other than carrot paste, it is effective in producing sheet-shaped foods having excellent taste and usability.
In addition, a similar test was conducted on apples processed into paste as an example of utilizing fruits. Fruits are a raw material with a high sugar content like pumpkin, and there was a phenomenon that apple paste alone cracked when dried, but by adding enokitake paste, cracks during drying disappeared and it became a sheet. Molding has become possible.

ナメコペースト、椎茸ペースト、エリンギペースト及びシメジペーストを使用したシート状食品はいずれも食味、強度と可塑性に優れた野菜のシート状食品を作製できた(実施例12〜15)。キノコの中でもムチンを多く含むナメコについては特に強度と可塑性に優れたシート状食品を得ることができた(実施例12)。また、椎茸については椎茸特有の香気成分がシート状食品の風味を良化させる結果となった(実施例13)。
以上の結果から、エノキダケ以外のキノコ類を使用した場合においてもシート状食品の成型、食味に効果があることが分かった。
Sheet-shaped foods using nameko paste, shiitake mushroom paste, eryngii paste, and shimeji paste were all able to produce vegetable sheet-shaped foods having excellent taste, strength, and plasticity (Examples 12 to 15). Among mushrooms, nameko, which contains a large amount of mucin, was able to obtain a sheet-shaped food having particularly excellent strength and plasticity (Example 12). As for shiitake mushrooms, the aroma component peculiar to shiitake mushrooms resulted in improving the flavor of the sheet-shaped food (Example 13).
From the above results, it was found that even when mushrooms other than enokitake mushrooms are used, they are effective in molding and taste of sheet-shaped foods.
