Abstract
Description
− 前記生鮮食料品を生産設備で生産する工程、
− 生産した前記生鮮食料品を、コンベヤ設備を用いて、配送する工程、
− それによって配送した前記食料品を包装設備で包装する工程、
− 生産設備、コンベヤ設備及び包装設備からなる群から選択される少なくとも1つの設備を洗浄する工程。
Claims (17)
- 生鮮食料品の貯蔵寿命を増加させる方法であって、以下の工程:
− 前記生鮮食料品を生産設備で生産する工程、
− 生産した前記生鮮食料品を、コンベヤ設備で配送する工程、
− それによって配送した前記食料品を、包装設備で包装する工程、
− 生産設備、コンベヤ設備及び包装設備からなる群から選択される少なくとも1つの設備を洗浄する工程、
を含み、
前記洗浄工程は、少なくとも1つの洗浄剤成分及び少なくとも1つの酵素成分を含む組成物を用い所定時間表面処理することによってバイオフィルムを除去するための少なくとも1つの工程と、前記表面をリンスする及び/又は乾燥する工程とを含むことを特徴とする、前記方法。 - 前記洗浄剤成分が湿潤剤及び分散剤を含む、請求項1に記載の生鮮食料品の貯蔵寿命を増加させる方法。
- 前記洗浄剤成分がさらに金属イオン封鎖剤を含む、請求項1又は2に記載の生鮮食料品の貯蔵寿命を増加させる方法。
- 前記少なくとも1つの酵素成分が、例えば少なくとも1つのプロテアーゼ、少なくとも1つのラッカーゼ及び少なくとも1つのポリサッカリダーゼを含有する、請求項1から3のいずれか一項に記載の生鮮食料品の貯蔵寿命を増加させる方法。
- 生鮮食料品の貯蔵寿命を増加させるための前記表面処理工程が、バイオフィルムを除去する工程を含み、少なくとも5%、好ましくは少なくとも10%、好ましくは少なくとも20%、生鮮食料品の貯蔵寿命を増加させる可能性をもたらすことを特徴とする、請求項1から4のいずれか一項に記載の生鮮食料品の貯蔵寿命を増加させる方法。
- 前記表面処理工程が、1分と1時間の間に含まれる所定時間、好ましくは3分と30分の間に含まれる所定時間、事前に形成した前記組成物及び希釈水性相を含む溶液を適用することによって行われることを特徴とする、請求項1から5のいずれか一項に記載の方法。
- 前記表面処理工程が、例えば機械もしくは手動ブラッシングにより又はさらに中圧もしくは高圧リンスを適用することにより、前記溶液を用い前記表面を機械的磨耗するための工程と関連することを特徴とする、請求項1から6のいずれか一項に記載の生鮮食料品の貯蔵寿命を増加させる方法。
- さらに、殺生物剤を用いて前記表面を処理するための追加の工程を含むことを特徴とする、請求項1から7のいずれか一項に記載の生鮮食料品の貯蔵寿命を増加させる方法。
- バイオフィルムを除去することにより、生鮮食料品の貯蔵寿命を増加させるための、少なくとも1つの洗浄剤成分及び少なくとも一つの酵素成分を含む組成物の使用。
- 前記洗浄剤成分が湿潤剤及び分散剤を含む、請求項9に記載の組成物の使用。
- 前記洗浄剤成分がさらに金属イオン封鎖剤を含む、請求項9又は10に記載の組成物の使用。
- 前記酵素成分が、例えば少なくとも1つのプロテアーゼ、少なくとも1つのラッカーゼ及び少なくとも1つのポリサッカリダーゼを含有する、請求項9又は11のいずれか一項に記載の組成物の使用。
- リステリア・モノサイトゲネス(Listeria monocytogenes)及び/又はセレウス菌(Bacillus cereus)及び/又はバチルス・ミコイデス(Bacillus mycoides)及び/又は緑膿菌(Pseudomonas aeruginosa)及び/又はシュードモナス・フルオレッセンス(Pseudomonas fluorescens)を含む汚染源を除去するための、請求項9から12のいずれか一項に記載の組成物の使用。
- 表面、生鮮食料品用生産ツール、又は、コンベヤ設備及び/又は生産設備及び/又は包装設備を処理し、生鮮食料品の貯蔵を増加させるための、少なくとも1つの洗浄剤成分及び少なくとも一つの酵素成分を含む組成物の使用。
- 前記洗浄剤成分が湿潤剤及び分散剤を含む、請求項14に記載の組成物の使用。
- 前記洗浄剤成分がさらに金属イオン封鎖剤を含む、請求項14又は15に記載の組成物の使用。
- 前記酵素成分が、例えば少なくとも1つのプロテアーゼ、少なくとも1つのラッカーゼ及び少なくとも1つのポリサッカリダーゼを含有する、請求項14から16のいずれか一項に記載の組成物の使用。
