Abstract

Il maturatore di cagliata comprende due cesti semicilindrici traforati (12, 30) montati girevolmente su un asse longitudinale comune, uno interno all'altro. Si versa la cagliata nel cesto interno, e si ruota poi uno dei cesti di 180° rispetto all'altro, bloccandolo con mezzi di aggancio (26, 28, 40) per rendere solidali fra di loro i due cesti (12, 24) in posizioni angolari contrapposte per formare un barile chiuso. Un motore (36, 38) permette di far ruotare i due cesti solidalmente, per far rotolare la cagliata fino a maturazione Il cesto interno è preferibilmente munito al suo interno di lame parallele trasversali (42).
