Food, e.g. ham in a mould, is cooked in a chamber 16 by impelling hot air saturated with water vapour through the chamber from bottom to top, or top to bottom, by a fan 5. The hot air is circulated in a closed path through the container 16 and through a surrounding passage 12. The air is moistened by passing over the surface of a water bath 18 at the bottom heated by gas burners 110. The hot gases from the burner pass through vertical tubes 111 in the air passage. In a modification without a water bath, the air is heated by steam or electric heating elements in the air passages.
