Abstract
676,369. Preserving food. ERASMIE, S. E. O. W. May 16, 1949 [May 14, 1948], No. 13017/49. Class 49. Raw or uncooked food is cleaned, and, after dividing into.pieces if desired, is placed, together with desired additions, e.g. salt, seasoning butter, in a container of flexible, transparent, impervious film capable of withstanding cooking temperatures, the container is evacuated and hermetically sealed, the volume of the container being so large in relation to the volume of the food that after such evacuation the excess portion of the container can be used as a handle for carrying the container without squashing the food therein, the food is cooked in the container, the steam produced being retained in, and inflating, the container, and is ready for serving as removed from the container. An example is concerned with such packing of fillets of freshly gutted, skinned and washed fish in tube-shaped containers of hard, smooth material to which the fish does not adhere, and with storage of these containers of fish in refrigerators, after freezing if desired, until the fish is to be cooked.
