Abstract

In preparing dried chicory root, the washed root is cut into pieces, e.g. is shredded or diced, allowed to ferment by maintenance in a moist atmosphere at a temperature of not more than 70 DEG C until the pH reaches a predetermined value, e.g. such fermentation is allowed to continue for 6-8 hours to a pH in the range 6.0-4.7, and then dried rapidly, e.g. in a stream of air at 150 DEG C.
