Abstract

In a process for making dried egg-white, the white is fermented with yeast to remove glucose, centrifuged or filtered to remove the yeast and then dried. Baker's yeast, Saccharomyces cerevisiae, may be used, e.g., 1 g. of yeast cake (of about 25 per cent dry weight) to 100 ml. of white.
