Abstract
In the process of the parent Specification, an edible organic acid such as lactic, racemic, citric, or tartaric acid is added to the smaller portion of the milk before or during the heating is above 100 DEG C., causing inversion of the lactose in the milk instead of treating the milk with a pure culture of lactic acid bacteria. To produce a sweetened milk powder, sucrose is dissolved in water or whey, sufficient of an edible organic acid is added to invert the sugar and the solution is heated to effect the inversion before or after mixing it with the milk used for the production of the milk powder according to the above process or that of the parent Specification. A sugar such as sucrose or lactose may be added to the smaller portion of the milk used in the production of milk powder according to either of the processes.
