Abstract

1343640 Drying vegetable material INSTITUT DE RECHERCHES APPLIQUEES AUX BOISSONS and BUREAU ETUDES RECHERCHES EXPLOITATION DE BREVETS 19 April 1971 [27 Feb 1970 (2)] 24324/71 Heading F4G [Also in Division A2] A vegetable material in liquid or pulp form comprising 50-85% of solids in water, is dehydrated by heating by means of an ultrahigh frequency electric field of frequency greater than or equal to 850 MHz (preferably 2450 MHz), at a pressure of 1 to 20 mm. Hg. A thickener or gas may be added to the vegetable material to produce foaming of the material. The high-frequency field is produced by a water-cooled magnetron connected to an antenna radiating through a plastics window into a stainless steel oven in the form of a horizontal cylinder. The vegetable material may be an infusion, decoction, juice, pulp, or essential oil of strawberry, raspberry, blackcurrent, granadilla, orange, lemon, grapefruit, mandarin orange, clementine, coffee, aniseed, mint, verbena, camomile, balm mint or linden material. The thickener may be a carbohydrate, glucide, sucroglyceride carragheen, gum arabic. pectinate, methylcellulose, carboxymethylcellulose, or a protein (e.g. albumin), or mixtures. The liquid may be initially concentrated to increase its viscosity by means of freezing or inverse osmosis or adding dried material. The continuous or intermittent heating lasts for between 4 and 30 minutes, and is succeeded by a period in which the vacuum is maintained. The vacuum is released by introducing nitrogen into the oven and the material is cooled, broken up and packaged. The heating under vacuum may be in two stages, i.e. at below 30‹ C. and at below 50‹ C.
