Abstract

1,200,700. Coffee extracts; coffee gum. DIA BEE CORP. 18 June, 1968 [14 July, 1967], No. 28966/68. Heading A2B. In the extraction of roasted coffee with an extracting fluid, there is present an effective amount of water soluble coffee gum, whereby the yield of soluble coffee is increased. The coffee gum may be obtained by subjecting coffee or coffee grounds to enzymatic treatment with cellulose, hemicellulose, or pectinase, or by treatment with an alkaline aqueous liquid for example calcium hydroxide or ammonia, whereby a substantially neutral solution consisting only of coffee extractives and coffee gum is obtained, the extractives being thereafter separated. The gum may be recovered by freeze drying or by solvent precipitation, if desired after treatment with cellulose, hemicellulose, or pectinase to reduce tendency to gelatinise.
