Abstract

Porous, freeze dried, fruit particles having a minor proportion by weight of gelatinized starch distributed therethrough are prepared by preparing a fruit puree, admixing the fruit puree with a minor but sufficient proportion of pregelatinized starch to form a dough, injecting an innocuous gas, e.g. air or nitrogen, into the dough so as to impart a porous texture thereto, chilling the product and shaping it into a form having suitable dimensions for freeze drying and thereafter freeze drying the thus shaped product. Fruits exemplified are bananas, peaches and strawberries; also specified are blueberries and boysenberries. Optional ingredients include ascorbic acid to prevent browning in peaches; gums; carboxymethyl cellulose salts; and sugars and artificial sweetners. The use of purees of mixed fruits such as peaches and apricots is mentioned.
