Abstract

In dehydrating fruits and vegetables, especially leguminous vegetables, the uncooked fruits or vegetables are immersed in a sugar solution at above 150 DEG F. for a time sufficient to allow substantial penetration of the fruit or vegetable by the sugar, but insufficient for any substantial cooking of the fruit or vegetable. The skin of the fruit or vegetable may be softened by blanching in a dilute alkaline solution. Peas, for example, are first blanched in a heated sodium carbonate solution of pH9-9.5 and are then immersed for 2-5 min. in a 5-15% sucrose solution at 212-150 DEG F., the peas being partly dried in warm air, if desired, between the blanching and the immersing treatments. Sucrose may be replaced by dextrose, maltrose or lactose. A flavouring such as mint may be introduced with the sugar solution.
