De manière connue, la division volumétrique de pâte de boulangerie en pâtons s'effectue au travers d'une trémie destinée à recevoir ladite pâte, cette dernière étant stockée en partie basse de la trémie par gravitation naturelle de la pâte s'écoulant le long des parois inclinées. La trémie débouche en partie basse dans une chambre dite de gavage au sein de laquelle la pâte est entraînée par aspiration sous l'action de pistons. Ces derniers sont disposés contiguës sur toute la longueur de la trémie et sont en déplacement horizontal transversal par rapport à l'axe longitudinal de ladite trémie. Une fois la quantité de pâte aspirée dans la chambre de gavage, cette dernière est séparée de la partie basse de la trémie au moyen d'un couteau, refermant ainsi ladite chambre. Il convient de noter que ledit couteau referme partiellement l'ouverture en partie basse de la trémie afin d'autoriser la compression de la quantité de pâte recueillie au sein de la chambre de gavage, au travers du déplacement des pistons en sens inverse. En effet, l'étanchéité de la chambre n'est pas réalisée au niveau de la partie basse de la trémie pour permettre l'évacuation, selon le cas, de l'air encore contenu dans la chambre de gavage ou d'un surplus de pâte. Par conséquent, au cours de l'opération de compression qui suit la fermeture de la chambre par le couteau, la pâte en excès peut retourner dans la trémie. A ce propos, la taille de la chambre de gavage est déterminée par un piston dit doseur , disposé en vis-à-vis de chaque piston utilisé pour l'aspiration et la compression. Le déplacement réglable de ce piston doseur permet de varier le volume de la chambre et la taille des pâtons réalisés. Un premier inconvénient de l'état de la technique provient des contraintes très élevées appliquées à la pâte lors de sa succion et de sa compression. L'aspiration de la pâte provoque son déchirement et la compression qui suit conduit à évacuer une partie de l'eau contenue dans la pâte ainsi que les bulles d'air de fermentation qui ont déjà pu se former au cours du séjournent de la pâte dans la trémie. Ainsi, la densité de la pâte tend à augmenter fortement pour atteindre des valeurs de l'ordre de 1,2 à 1,3. Les tensions emmagasinées dans la pâte, matériau possédant une élasticité et une mémoire de forme, ressortiront lors du travail des pâtons, entraînant une irrégularité dans les produits obtenus. Un autre problème réside dans la puissance conséquente nécessaire pour aspirer et comprimer la pâte, en raison de la résistance de cette dernière, ce qui limite le nombre de pistons équipant les dispositif de division volumétrique connu et, par conséquent, leur rendement. Ensuite, une fois la pâte enfermée et comprimée dans la chambre de gavage, par déplacement simultanément du piston de gavage et du piston doseur, on vient décaler cette chambre de manière à faire coïncider le piston doseur et la pâton, ainsi défini, avec un couloir d'extraction vertical. S'en suit un décalage vertical de ce piston doseur et dudit pâton pour atteindre une position d'évacuation dans laquelle le piston doseur vient éjecter le pâton sur un tapis roulant. Cette évacuation est réalisée par une poussée horizontale du piston doseur, les pâtons glissants de la chambre sur ledit tapis. Un autre inconvénient provient de ce cycle d'évacuation relativement complexe d'où résulte une perte de temps et une cadence de production limitée. L'invention a pour but de pallier les inconvénients de l'état de la technique en proposant un procédé de division volumétrique de pâte de boulangerie, viennoiserie pâtisserie ou analogue, contenue dans une trémie, caractérisé par le fait qu'il consiste à : - laisser s'écouler ladite pâte par gravitation dans une chambre de gavage s'étendant sous une ouverture située à la 10 base de ladite trémie ; - refermer au moins partiellement ladite chambre de gavage ; - procéder à la division volumétrique en pâtons de la quantité de pâte contenue dans ladite chambre de gavage ; 15 - retourner cette dernière ; - déverser lesdits pâtons sur un support. L'invention concerne aussi un dispositif de division volumétrique de pâte de boulangerie, viennoiserie pâtisserie ou analogue, pour la mise en œuvre du procédé précédent, 20 comprenant une trémie contenant ladite pâte pourvue en sa partie basse d'une ouverture communiquant avec une chambre de gavage apte à calibrer une quantité de pâte à diviser, caractérisé par le fait que ledit dispositif comprend, d'une part, des moyens de découpe de ladite quantité de pâte en 25 pâtons par subdivision de ladite chambre de gavage en compartiments et, d'autre part, des moyens de déversement desdits pâtons sur un support d'évacuation constitué par des moyens de retournement de la chambre de gavage en vis-à-vis dudit support d'évacuation. 30 Les avantages qui découlent de la présente invention consistent de manière essentielle en ce que la pâte ne subit aucune contrainte excessive. Son prélèvement depuis la trémie intervient par simple gravité. De manière inattendue, la présente invention permet d'atteindre des cadences largement 35 supérieures en comparaison aux solutions antérieures qui, pourtant assuraient un prélèvement par succion, donc mécaniquement de la pâte de cette trémie. En fait, en permettant à la pâte de s'écouler librement dans la chambre de gavage, la solution selon l'invention n'est pas limité par une quelconque puissance de d'aspiration de cette pâte et la chambre de gavage peut adopter une dimension quelconque. Ainsi, paradoxalement, au travers de la présente invention, au moment de la division de la pâte en pâtons, cette pâte ne subit aucune sollicitation qui en altère les caractéristiques physiques, pour autant l'opération de division ne constitue plus une facteur limitant dans une chaîne de production de produits de boulangerie. La présente invention concerne la division volumétrique de pâte 1 de boulangerie, viennoiserie, pâtisserie ou analogue en pâtons 2. Pour ce faire, la pâte 1 est contenue dans une trémie 3 conformée en entonnoir pour permettre l'écoulement de ladite pâte 1 le long de ses parois inclinées 4. La pâte 1 est donc stockée en partie basse 5 de la trémie 3 communiquant avec une chambre de gavage 6 au travers d'une ouverture 7. Ladite chambre de gavage 6 s'étend donc sous la trémie 3, sur tout ou partie de la longueur de cette dernière, et est destinée à recevoir, au travers de l'écoulement par gravité de la pâte 1 depuis la trémie 3, une quantité de pâte à diviser en pâtons 2. Un avantage de la présente invention réside dans le fait que la pâte 1 ne subit pas de contrainte d'aspiration ou de succion. En effet, le passage de la pâte depuis la trémie 3 vers la chambre de gavage 6 s'effectue sous l'effet du poids de la pâte 1, par l'action de la gravité. Cette chambre de gavage 6 comporte des parois latérales et une paroi inférieure 8 qui en forme le fond. De manière particulière, au moins une de ces parois, de préférence la paroi inférieure 8 est prévue mobile, permettant le dosage de la pâte 1 susceptible d'être contenue dans la chambre de gavage 6 et d'assurer une opération de calibrage comme cela sera expliqué plus en avant dans la description. Eventuellement, cette mobilité de paroi inférieure 8 de la chambre de gavage 6 permet encore d'accompagner l'écoulement de la pâte 1 depuis la trémie 3. De préférence, cette paroi inférieure 8 est apte à se déplacer verticalement du haut vers le bas et inversement. Une fois la quantité de pâte 1 prédéfinie déversée dans la chambre de gavage 6, cette dernière est refermée. La fermeture de la chambre 6 s'effectue au moins partiellement. Cette fermeture partielle autorise, au cours de l'opération ultérieure de calibrage de la quantité de pâte contenue dans la chambre de gavage 6, le retour d'une partie de la pâte 1 dans la trémie 3. La fermeture de la chambre 6 s'effectue au niveau de l'ouverture 7 en partie basse 5 de la trémie 3. Cette fermeture est effectuée au travers d'un outil de coupe 9, tel une lame s'étendant longitudinalement par rapport à la trémie 3 et séparant cette dernière de la chambre de gavage 6. Ainsi, la pâte 1 contenue dans la trémie 3 ne se déverse plus dans la chambre 6, l'ouverture 7 étant obturée par l'outil de coupe 9. Ce dernier est prévu mobile, de préférence en translation horizontale, selon un déplacement transversal par rapport à l'axe longitudinal de ladite trémie 3. Une fois la quantité souhaitée de pâte 1 déversée dans la chambre de gavage 6, alors en partie isolée de la trémie 3, un calibrage de la pâte 1 est effectué. Ce calibrage est réalisé par légère pression de la pâte 1 de manière à repousser le reflux de pâte 1 en surplus dans ladite trémie 3. En d'autres termes, par la remonté de la paroi inférieure 8 la pâte 1 est répartie dans la chambre de gavage 6 et l'excédent est repoussée en dehors de cette chambre 6 vers la trémie 3, moyennant la fermeture partielle de l'ouverture 7. Ainsi, les moyens de calibrage de la pâte sont constitués, substantiellement, par une paroi mobile de ladite chambre de gavage 6. En particulier, cette paroi peut être la paroi inférieure 8 et peut être constituée par un piston 10. Ce dernier est prévu mobile en translation, selon un déplacement vertical de bas en haut et inversement. Il convient de noter qu'en fin d'opération de calibrage, l'ouverture 7 peut éventuellement être entièrement obturée par l'outil de coupe 9. Toutefois, on peut encore déterminer le libre passage préservé pour permettre le calibrage pour éviter l'écoulement par simple gravité de la pâte 1 depuis la trémie 3. L'étape suivante du procédé selon l'invention consiste à 15 procédé à la division volumétrique en pâtons 2 de la quantité de pâte 1 contenue dans ladite chambre de gavage 6. Pour ce faire, le dispositif selon l'invention comprend des moyens 11 de découpe de ladite quantité de pâte 1 en pâtons 2 par subdivision de ladite chambre de gavage 6 en 20 compartiments 12. Ces moyens de découpe 11 se présentent sous la forme d'au moins un couteau 13 susceptible de pénétrer dans cette chambre de gavage 6 de manière à la subdiviser en compartiments 12 distincts. Préférentiellement, ce ou ces couteaux 13 sont montés mobiles en déplacement vertical sous la 25 chambre de gavage 6. La translation du couteau 13 s'effectue sur toute la hauteur de la chambre 6 pour découper la pâte 1 en pâtons 2, préférentiellement de tailles similaires. Une fois cette découpe égale réalisée, chaque couteau 13 est maintenu en position haute, délimitant les compartiments 12 à l'intérieur 30 de la chambre de gavage 6. A ce sujet, les compartiments 12 peuvent être réalisés de manière à délimiter des sections transversales par rapport à ladite chambre de gavage 6, sur tout ou partie de sa longueur, comme visible sur la figure 1. Selon un autre mode de 35 réalisation, une division longitudinale de la chambre peut être effectuée, en combinaison ou non avec une division transversale. Les couteaux 13 pénètrent dans la chambre de gavage 6 en passant par des interstices préservés au niveau d'une des parois de cette chambre 6. Ce support 14 alors mobile achemine les pâtons 2 en sortie de chambre de gavage 6 vers les autres étapes de fabrication des produits de boulangerie, viennoiserie, pâtisserie ou analogue. L'éjection des pâtons 2 est effectuée au travers de moyens de déversement desdits pâtons 2 sur le support d'évacuation 14. Ces moyens de déversement peuvent être constitués par des moyens de retournement 15 de la chambre de gavage 6 en vis-à-vis dudit support 14. Selon d'autres modes de réalisation, le retournement de la chambre 6 peut être effectué selon un autre angle, par exemple au droit ou latéralement par rapport au support 14. Lesdits moyens de déversement sont complétés par des moyens d'éjection mécanique des pâtons 2 de leurs compartiments respectifs. L'évacuation des pâtons 2 contenus dans chaque compartiment 12 est donc réalisée au travers d'une poussée à partir de la paroi 8. En particulier, cette poussée est opérée par chaque piston 10 formant le fond de chaque compartiment 12. Dans la représentation de la figure 6, cette éjection est réalisée par un déplacement vertical du haut vers le bas du piston 10. Un autre avantage de l'invention réside dans le fait que l'éjection de chaque pâton 2 peut être commandée. En effet, la chambre 6 étant divisée en compartiment 12 chacun pourvu d'un piston 10, il est possible d'expulser chaque pâton 2 de manière à les espacer sur le support 14. En particulier, une disposition régulière des pâtons 2 sur le support peut être réalisée, notamment avec un espacement équivalent entre chaque pâton 2. Un séquençage homogène des pâtons 2 est alors possible, notamment par déplacement du support 14. En particulier, l'éjection consiste à déverser alternativement deux pâtons 2, situés côté à côté dans la chambre de gavage 6, de manière à les disposer de manière séquencée sur ledit support 14. Pour cela et selon un premier mode de réalisation, chaque piston 10 de chaque compartiment 12 est conçu apte à être contrôlé et commandé séparément en vue de l'éjection des pâtons 2.
