Abstract

Vessel is of the vertical, cylindrical type, and has external heat exchangers in base and sidewall jackets. Vessel space contains internal heat exchangers of the same type as the external heat exchangers and of generally cylindrical form. All heat exchangers are pref. piped up to receive a forced circulation of water which flows in turbulent conditions through the heat exchanger. The vessel base and wall are pref. made of stainless steel. The internal heat exchangers are pref. made tubes in smooth-walled, tight spirals. An agitator is pref. fitted inside the vessel to circulate the prod. The interior of the vessel is pref. fitted with cleaning sprays, partic. rotary spray balls. Used industrial scale mfr. of yoghourt and similar prods. based on fermented milk.
