Abstract

Procédé de panification accélérée et simplifiée, pour pains ou autres produits obtenus à partir de produits panifiables, caractérisé par le fait que la levée ou << pousse >> de la pâte s'effectue en atmosphère humide et à température relativement élevée (30 à 40 degrés C) dans une enceinte close à partir d'un agent levant et d'une farine panifiable ou d'une composition à base de farine panifiable. L'invention concerne également les produits obtenus par ce procédé.
