Abstract
L'invention décrit l'inactivation sélective de l'activité protéolytique constituant une impureté dans des préparations d' alpha -amylase, et l'application à la transformation par hydrolyse d'une matière amylacée. On effectue cette inactivation par un traitement de chauffage modéré en présence d'une matière protectrice (calcium et/ou hydrolysats d'amidon comme du sirop de glucose). L'aamylase sans protéase peut alors servir à solubiliser des matières amylacées dans divers procédés classiques ou traitant de l'amidon granulaire. Les hydrolysats obtenus contiennent nettement moins de protéines solubles que ceux préparés à l'aide d' alpha -amylases non traitées. Une préparation d' alpha -amylase préférée est celle provenant du micro-organisme Bacillus licheniformis.The invention describes the selective inactivation of the proteolytic activity constituting an impurity in alpha-amylase preparations, and application to the transformation by hydrolysis of a starchy material.
