Abstract

Keksintö koskee menetelmää juuston valmistamiseksi, joka menetelmä käsittää vaiheet: otetaan maitoraaka-aine, saatetaan maitoraaka-aine mikrosuodatukseen ja esihapatukseen, jolloin muodostuu hapatettu kaseiinikonsentraatti; konsentroidaan hapatettu kaseiinikonsentraatti, jolloin muodostuu täyskonsentroitu esijuusto, prosessoidaan täyskonsentroitu esijuusto juustotuotteeksi. Keksintö koskee myös juustoa, jossa β-laktoglobuliinin ja α-laktalbumiinin kokonaispitoisuuden suhde glykomakropeptideihin on korkeintaan noin 1,35.
