Abstract

Nuevo procedimiento para la obtención de cerveza sin alcohol, que consiste en utilizar una instalación cervecero, realizándose la utilización de malta y sémola de maíz en un 70 y 30% respectivamente, y a continuación un, proceso de braseado a una temperatura de proteolisis aproximadamente de 40ºC, y de amilolisis de 72ºC, teniendo cuidado para evitar la oxidación, empleándose temperaturas de ebullición del mosto de 105ºC y de ebullición de 90 minutos, dosificándose Silica-Gel en estado "sol'' y en cantidades que oscilan entre 20 y 30 ppm, realizándose la absorción por carragenatos, y posteriormente ajustando el pH mediante ácido cítrico o láctico, hasta obtener un pH de 4,2.
