Claims (4)

  1. - Un four (1) comprenant une cavité de cuisson (2) où le processus de cuisson est réalisé ; au moins un chauffage tubulaire (5) qui chauffe l'air dans la cavité de cuisson (2) et qui est composé de coudes (3) et de jambes (4) ; et un ventilateur (6) qui est disposé derrière la cavité de cuisson (2), une conduite d'alimentation en eau (9) qui prélève de l'eau d'une alimentation en eau (7) au moyen d'un élément de transfert d'eau (8) afin de générer de la vapeur, et un tuyau de génération de vapeur (11) dont une extrémité est connectée à la conduite d'alimentation en eau (9), qui est disposé sur le chauffage (5) de manière à entrer en contact avec la surface supérieure d'au moins une jambe (4) et/ou un coude (3) du chauffage (5), qui génère de la vapeur avec l'eau prélevée de la conduite d'alimentation en eau (9) et qui délivre de la vapeur dans la cavité de cuisson (2) à travers un orifice de sortie de vapeur (10) prévu à l'autre extrémité de celui-ci, caractérisé par un tuyau de collecte d'eau (16) qui est positionné au-dessus du tuyau de génération de vapeur (11), qui s'étend au moins partiellement le long du tuyau de génération de vapeur (11) et qui est connecté de manière fluidique au tuyau de génération de vapeur (11).
  2. - Un four (1) tel que dans la revendication 1, caractérisé par une pluralité de trous de sortie de vapeur latéraux (12) qui sont ouverts sur la surface supérieure ou latérale du tuyau de génération de vapeur (11) qui ne vient pas en contact avec le chauffage (5) et qui sont disposés longitudinalement avant l'orifice de sortie de vapeur (10).
  3. - Un four (1) tel que dans la revendication 1 ou 2, caractérisé par le chauffage (5), le tuyau de génération de vapeur (11) et le tuyau de collecte d'eau (16) qui sont disposés l'un au-dessus de l'autre.
  4. - Un four (1) tel que dans la revendication 3, caractérisé par l'élément thermoconducteur (15) qui est fabriqué à partir d'un matériau ayant un coefficient de conductivité thermique élevé, qui est disposé entre le chauffage et le tuyau de génération de vapeur et qui entoure les trois éléments que sont le chauffage (5), le tuyau de génération de vapeur (11) et le tuyau de collecte d'eau (16).
