Claims (20)

  1. Appareil de cuisson (2), comprenant
    un arbre
    un espace de cuisson (4),
    un système de distribution (12) pour un liquide de nettoyage permettant de nettoyer l'espace de cuisson (4) et
    un système de circulation (14) permettant de faire circuler le liquide de nettoyage, comportant une pompe (16), une conduite d'évacuation (18) et une conduite d'arrivée (20),
    dans lequel la pompe (16) est raccordée à une évacuation (22) de l'espace de cuisson (4) disposée dans un fond d'espace de cuisson (6) de l'espace de cuisson (4) d'une manière conductrice d'écoulement au moyen de la conduite d'évacuation (18) et est raccordée à une ouverture d'arrivée (24) du système de distribution (12) d'une manière conductrice d'écoulement au moyen de la conduite d'arrivée (20),
    dans lequel le système de distribution (12) présente un disque de distribution (26), comportant un boulon de pivotement (28) permettant la liaison de transmission de couple avec l'arbre, comportant une plaque de base (40) disposée sur le boulon de pivotement (28) de manière sensiblement perpendiculaire à un axe longitudinal (38) du boulon de pivotement (28) et
    comportant au moins trois ailes (42) disposées entre le boulon de pivotement (28) et la plaque de base (40),
    dans lequel respectivement une chambre (44) est formée entre des ailes (42) directement adjacentes et délimitée par le boulon de pivotement (28), la plaque de base (40) et lesdites deux ailes (42),
    caractérisé en ce que
    le système de distribution (12) comprend un boîtier de distribution (32),
    et
    le disque de distribution (26) étant disposé, de préférence seulement partiellement, dans le boîtier de distribution (32), de manière rotative par rapport au boîtier de distribution (32),
    et
    le boîtier de distribution (32) présentant une ouverture d'arrivée (24) pour l'alimentation du disque de distribution (26) en liquide de nettoyage et entourant le disque de distribution (26) de telle manière qu'un espace annulaire (34) comportant une ouverture de sortie circonférentielle (36) pour le liquide de nettoyage est formé entre le boîtier de distribution (32) et le disque de distribution (26).
  2. Appareil de cuisson selon la revendication 1, dans lequel le disque de distribution (26) présente quatre ailes (42) disposées symétriquement les unes par rapport aux autres entre le boulon de pivotement (28) et la plaque de base (40).
  3. Appareil de cuisson selon l'une des revendications précédentes, dans lequel chacune des ailes (42) forme un angle aigu avec l'axe longitudinal (38) du boulon de pivotement (28), de préférence, chacune des ailes (42) présentant, en partant de la plaque de base (40), une première section d'aile (42a) et une seconde section d'aile (42b) se raccordant à la première section d'aile (42a) en direction d'une extrémité libre de l'aile (42), la première section d'aile (42a) formant un angle α de 75° avec la plaque de base (40) et la seconde section d'aile (42b) formant un angle β de 85° avec la plaque de base (40).
  4. Appareil de cuisson selon l'une des revendications précédentes, dans lequel chacune des ailes (42) s'étend sensiblement jusqu'à une extrémité libre de la plaque de base (40) et jusqu'à une extrémité libre du boulon de pivotement (28), l'aile (42) respective présentant une forme en L, de préférence, la plaque de base (40) présentant un diamètre D de 50 mm et/ou le boulon de pivotement (28) présentant un diamètre extérieur d de 8 mm et/ou chacune des ailes (42) en forme de L présentant, sur son extrémité libre associée à la plaque de base (40), une hauteur h de 6 mm et, sur son extrémité libre associée au boulon de pivotement (28), une hauteur H de 22 mm, de manière particulièrement préférée, le diamètre D de la plaque de base (40) étant conçu comme adapté à une vitesse du boulon de pivotement (28) de telle manière que sensiblement tout l'espace de cuisson (4) peut être exposé au liquide de nettoyage au moyen du disque de distribution (26).
  5. Appareil de cuisson (2) selon l'une des revendications précédentes, dans lequel le boîtier de distribution (32) est disposé à l'extérieur de l'espace de cuisson (4) et le disque de distribution (26), d'une part, pénètre dans le boîtier de distribution (32) avec un côté du disque de distribution (26) faisant face au boîtier de distribution (32) à travers une ouverture dans une paroi d'espace de cuisson (8) de l'espace de cuisson (4) et, d'autre part, fait saillie dans l'espace de cuisson (4), avec la plaque de base (40), avec un côté du disque de distribution (26) faisant face à l'espace de cuisson (4), à travers l'ouverture, l'ouverture dans la paroi d'espace de cuisson (8) fournissant l'ouverture de sortie (36).

Appareil de cuisson (2) selon l'une des revendications précédentes, dans lequel le système de distribution (12) est disposé approximativement au centre d'une paroi d'espace de cuisson (8) de l'espace de cuisson (4) conçue en tant que plafond d'espace de cuisson, de préférence, le système de distribution (12) étant disposé de manière sensiblement perpendiculaire au-dessus de l'évacuation (22).
  8. Appareil de cuisson (2) selon l'une des revendications précédentes, dans lequel la conduite d'arrivée (20) est en outre raccordée à l'évacuation (22) d'une manière conductrice d'écoulement au moyen d'une conduite de dérivation (52) du système de circulation (14), la conduite de dérivation (52) pouvant être verrouillée, dans un mode sans dérivation, au moyen d'au moins une vanne (54).
  9. Appareil de cuisson selon l'une des revendications précédentes, dans lequel l'appareil de cuisson présente un générateur de vapeur, le générateur de vapeur pouvant être relié à l'évacuation d'une manière conductrice d'écoulement, dans un mode de nettoyage à la vapeur, au moyen d'une conduite de vapeur, et la conduite de vapeur pouvant être verrouillée, dans un mode de non-nettoyage à la vapeur, au moyen d'au moins une vanne.
  10. Appareil de cuisson selon la revendication 9, dans lequel la conduite de vapeur comprend la conduite d'arrivée et la conduite d'évacuation ou la conduite d'évacuation, la conduite d'arrivée ou la conduite d'évacuation pouvant être verrouillée, dans le mode de nettoyage à la vapeur, au moyen d'au moins une vanne, de telle manière que la vapeur ne peut pas s'échapper par l'ouverture d'arrivée du système de distribution.
  11. Procédé permettant le nettoyage d'un espace de cuisson (4) d'un appareil de cuisson (2) selon l'une des revendications 1 à 10 au moyen d'un liquide de nettoyage lors d'un processus de nettoyage comportant au moins un cycle de nettoyage,
    dans lequel le procédé présente les étapes de procédé suivantes :
    - alimentation du disque de distribution (26) en liquide de nettoyage au moyen de la conduite d'arrivée (20) et de l'ouverture d'arrivée (24) ;
    - variation d'une vitesse de rotation du disque de distribution (26) du système de distribution (12) en fonction d'un programme de nettoyage préalablement déterminé et mémorisé dans une commande de l'appareil de cuisson (2).
  12. Procédé selon la revendication 11, dans lequel le programme de nettoyage est configuré de telle manière qu'au début de l'au moins un cycle de nettoyage, le disque de distribution (26) fonctionne à une vitesse de rotation maximale du cycle de nettoyage et la vitesse de rotation est réduite après une période de temps préalablement déterminée.
  13. Procédé selon la revendication 12, dans lequel au moins une augmentation soudaine, de préférence une pluralité d'augmentations soudaines, de la vitesse de rotation du disque de distribution (26) se produit dans au moins un de l'au moins un cycle de nettoyage après la vitesse de rotation maximale du disque de distribution (26) dans le temps, respectivement une diminution de la vitesse de rotation suivant directement respectivement une augmentation soudaine dans le temps.
  14. Procédé selon l'une des revendications 11 à 13, dans lequel l'au moins un cycle de nettoyage présente un profil en dents de scie dans un diagramme vitesse-temps.
  15. Procédé selon l'une des revendications 11 à 14, dans lequel le système de distribution (12) fonctionne de telle manière que pendant le processus de nettoyage, les parois latérales d'espace de cuisson (10) et le fond d'espace de cuisson (6) et/ou les parois latérales d'espace de cuisson (10) et le plafond d'espace de cuisson (8) sont directement exposés au liquide de nettoyage provenant du système de distribution (12), de préférence une vitesse du boulon de pivotement (28) étant adaptée au diamètre D de la plaque de base (40) de telle manière que les parois latérales d'espace de cuisson (10) et le fond d'espace de cuisson (6) et/ou les parois latérales d'espace de cuisson (10) et le plafond d'espace de cuisson (8) sont sensiblement complètement exposés au liquide de nettoyage au moyen du disque de distribution (26).
  16. Procédé selon l'une des revendications 11 à 15, dans lequel l'au moins un cycle de nettoyage est configuré comme une pluralité de cycles de nettoyage et une période de temps préalablement déterminée est prévue entre deux cycles de nettoyage directement consécutifs dans le temps, dans lesquels la vitesse de rotation du disque de distribution (26) est réduite à une vitesse inférieure, préférablement est réduite à zéro, de préférence ladite période de temps étant prévue après chaque cycle de nettoyage individuel ou après un nombre préalablement déterminé de cycles de nettoyage consécutifs dans le temps.
  17. Procédé selon l'une des revendications 11 à 16, dans lequel après la détection automatique d'un blocage de l'évacuation (22) et/ou à des intervalles de temps préalablement déterminés, pendant le processus de nettoyage, le système de circulation (14) est actionné dans un état de lavage à contre-courant de telle manière que le liquide de nettoyage est acheminé à travers l'évacuation (22), à l'opposé d'un sens de circulation (46) du système de circulation (14), de préférence la pompe (16) acheminant le liquide de nettoyage à travers l'évacuation (22) à l'opposé du sens de circulation (46) du système de circulation (14) pendant l'état de lavage à contre-courant, ou la pompe (16) étant arrêtée pendant l'état de lavage à contre-courant de telle manière que le liquide de nettoyage est acheminé à travers l'évacuation (22), à l'opposé du sens de circulation (46) du système de circulation (14), au moyen de la force de gravité.
  18. Procédé selon la revendication 17, dans lequel la conduite d'arrivée (20) est reliée directement à l'évacuation (22) d'une manière conductrice d'écoulement au moyen de la conduite de dérivation (52) pendant l'état de lavage à contre-courant, de sorte que le liquide de nettoyage est acheminé à travers l'évacuation (22), à l'opposé du sens de circulation (46) du système de circulation (14), au moyen de la force de gravité dans un mode de dérivation.
  19. Procédé selon l'une des revendications 11 à 18, dans lequel le disque de distribution (26) et l'évacuation (22) sont disposés verticalement l'un au-dessus de l'autre et pour nettoyer l'évacuation (22), le disque de distribution (26) est maintenu fixe, de sorte que le liquide de nettoyage goutte ou s'écoule directement sur l'évacuation (22) depuis le disque de distribution (26).
  20. Procédé selon l'une des revendications 11 à 19, dans lequel le générateur de vapeur est relié à l'évacuation pendant le mode de nettoyage à la vapeur indirectement au moyen de la conduite de vapeur, au moyen de la conduite d'arrivée et de la conduite d'évacuation ou de la conduite d'évacuation, ou directement d'une manière conductrice d'écoulement, de telle manière que de la vapeur générée par le générateur de vapeur est acheminée à travers l'évacuation.
