Dispositif selon l'une des revendications 2 à 4, caractérisé en ce que l'on prévoit une plaque d'appui (15) orientée sensiblement de façon verticale qui peut avancer horizontalement et s'incliner, ainsi qu'en ce que dans la plaque d'appui (15) de l'aile (17a), qui présente la surface de contact (25), de la première règle (17) peut être montée de façon mobile dans le plan de la plaque d'appui (15) et se déplace sensiblement dans le sens vertical.
  6. Dispositif selon la revendication 5, caractérisé en ce que le premier vérin pneumatique (11) met en prise par les extrémités libres de sa tige de piston, montées à une certaine distance de la ligne de coupe des ailes (17a, 17b), en faisant pivoter, sur l'aile (17a) de la première règle (17) présentant les surfaces de contact (25), en ce que le deuxième vérin pneumatique (12)vient en prise par les extrémités libres de ses tiges de piston (14), à une distance plus grande de la ligne de coupe des ailes (17a, 17b), de façon à pouvoir pivoter sur l'aile (17a) de la première règle (17) qui présente la surface de contact (25), ainsi qu'en ce que le troisième vérin pneumatique (20) agissant sensiblement dans le sens transversal de la plaque d'appui (15) et de l'aile (17a) présentant la surface de contact (25) reliant cette aile (17a) et la plaque d'appui (15) par interpénétration par la force.
  7. Dispositif selon la revendication 6, caractérisé en ce que l'aide (17a) de la première règle (17) qui présente la surface de contact (25) est reliée sur son extrémité située à l'opposé de l'aile (17b) qui présente la surface d'appui (24) à une autre aile d'appui (17b) orientée en sens contraire de l'aile (17b) présentant la surface d'appui (24), aile (17c) qui reçoit le troisième vérin pneumatique (20), dont les tiges de piston (21) sont reliées à des appendices de la plaque d'appui (15) sur le côté situé à l'opposé de la première règle (17).
  8. Dispositif selon la revendication 7, caractérisé en ce que le mouvement de basculement de la première règle (17) à partir de la position verticale de l'aile (17a) présentant la surface de contact (25) constitue un recouvrement du mouvement du premier et second vérin pneumatique (11, 12) à l'écart des produits à couper (8) et du mouvement de la première règle (17) vers le bas du moyen du troisième vérin pneumatique (20).
  9. Dispositif selon l'une des revendications 3 à 8, caractérisé en ce que le premier vérin pneumatique (11) peut être actionné avec une composante de mouvement dans le sens d'avancement (C) des produits à couper ou en sens contraire et le second vérin pneumatique (12) est accouplé au premier vérin pneumatique (11) en suivant son mouvement, le mouvement des tiges de piston (13, 14) du premier et second vérin pneumatique (11, 12) ayant lieu dans le sens d'avancement (C) des produits à couper ou en sens contraire.
  10. Dispositif selon l'une des revendications 1 à 9, caractérisé en ce que la première règle (29) est pourvue sur son côté tourné vers la zone de sortie (24 ; 35) d'une barre d'appui (30), dont le plan supérieur d'appui (31) forme à peu près un plan avec la surface d'appui (24) de la première règle (17) quand celle-ci est en position horizontale.
  11. Dispositif selon l'une des revendications 1 à 10, caractérisé en ce que sur le côté du couteau (5), qui est situé à l'opposé du sommier de pression (6), on dispose le serre-flan (26), qui peut être abaissé au moyen d'un organe de réglage distinct (27) de façon synchrone avec le mouvement du couteau sur les produits à couper (8).
  12. Dispositif selon la revendication 11, caractérisé en ce que le serre-flan (26) comprend un élément élastique (26a) qui présente à son extrémité inférieure, éloignée du couteau, un galet de serre-flan (26b), pouvant tourner, monté parallèlement à la ligne de coupe.
  13. Dispositif selon l'une des revendications 4 à 12, caractérisé en ce que l'aile (17b) de la première règle (17) qui présente la surface de contact (25) est pourvue d'une multiplicité de trous de passage (34) de faible diamètre.
