Claims (16)
1. Fremgangsmåde til fremstilling af en beta-kasein-indeholdende sammensætning, hvilken fremgangsmåde omfatter trinnene: a) at forvarme en mælk ved at justere den til en forvarmningstemperatur (Tpre) i området på 20-60 grader C og med en holdetid i området på 1 minut -1 time, hvorved der tilvejebringes en varm mælk, b) at udsætte den varme mælk for mikrofiltrering (MF), hvorved der tilvejebringes et første MF-permeat og et første MF-retentat, c) eventuelt at udsætte det første MF-retentat for MF-diafiltrering, d) at justere temperaturen af en første sammensætning, der er afledt af det første MF-retentat, til en kold temperatur (Tk0|d) i området på 0-15 grader C og holde temperaturen af den første sammensætning inden for dette område i en varighed (tk0id) på mindst 0,5 timer, hvorved der opnås en afkølet første sammensætning, e) at udsætte den afkølede første sammensætning for MF, hvorved der opnås et andet retentat og et andet permeat, hvor det andet permeat er beriget i forhold til beta-kasein, og f) eventuelt at udsætte det andet MF-retentat for MF-diafiltrering, g) eventuelt at udsætte en anden sammensætning, der er afledt af det andet permeat, for et eller flere yderligere behandlingstrin, f.eks. yderligere oprensnings- og/eller koncentrationstrin, hvorved den beta-kasein-indeholdende sammensætning tilvejebringes.
2. Fremgangsmåde ifølge et hvilket som helst af de foregående krav, hvor filteret for MF af den varme mælk har en nominel porestørrelse i området på 0,005-0,3 mikrometer.
3. Fremgangsmåde ifølge et hvilket som helst af de foregående krav, hvor temperaturen af tilførslen under MF af den varme mælk holdes på en temperatur (TwMF) på mindst 20 grader C.
4. Fremgangsmåde ifølge et hvilket som helst af de foregående krav, hvor temperaturen af tilførslen og retentatstrømmen holdes inden for det varme MF-temperaturområde under mindst en del af MF-diafiltreringen.
5. Fremgangsmåde ifølge et hvilket som helst af de foregående krav, hvor mindst en del af MF-diafiltreringen indbefatter anvendelsen af et første fortyndingsmiddel, som har en koncentration på Ca2+ på mindst 0,01 g/kg.
6. Fremgangsmåde ifølge krav 5, hvor det første fortyndingsmiddel har en pH i området på 6-8.
7. Fremgangsmåde ifølge krav 5 eller 6, hvor det første fortyndingsmiddel omfatter et ultrafiltrerings-(UF)-permeat af mælk eller valle.
8. Fremgangsmåde ifølge et hvilket som helst af de foregående krav, hvor den første sammensætning omfatter en samlet mængde af kasein på mindst 90 vægtprocent i forhold til den samlede mængde af protein af den første sammensætning og en samlet mængde af mælkeserumprotein på højst 10 vægtprocent i forhold til den samlede mængde af protein af den første sammensætning.
9. Fremgangsmåde ifølge et hvilket som helst af de foregående krav, hvor den første sammensætning omfatter en samlet mængde af beta-kasein på mindst 20 vægtprocent i forhold til den samlede mængde af kasein.
10. Fremgangsmåde ifølge et hvilket som helst af de foregående krav, hvilken fremgangsmåde omfatter trin c), og hvor den første sammensætning omfatter diafiltreringsretentat eller et proteinkoncentrat deraf.
11. Fremgangsmåde ifølge et hvilket som helst af de foregående krav, hvor den første sammensætning holdes inden for det kolde temperaturområde i mindst 1 time før trin e).
12. Fremgangsmåde ifølge et hvilket som helst af de foregående krav, hvor den afkølede første sammensætning har en temperatur i området på 3-12 grader C.
13. Fremgangsmåde ifølge et hvilket som helst af de foregående krav, hvor fremgangsmåden omfatter trin g).
14. Fremgangsmåde ifølge et hvilket som helst af de foregående krav, hvor trin g) indbefatter en forøgelse af vægtprocenten af beta-kasein af den anden sammensætning til mindst 50 vægtprocent på tørvægtbasis.
15. Fremgangsmåde ifølge et hvilket som helst af de foregående krav, hvor trin g) indbefatter en forøgelse af faststofandelen af den anden sammensætning til mindst 5 vægtprocent.
16. Fremgangsmåde ifølge et hvilket som helst af de foregående krav, hvor koncentrationen i trin g) indbefatter en eller flere processer udvalgt fra gruppen bestående af ultrafiltrering, nanofiltrering, omvendt osmose, fordampning, spraytørring og frysetørring.
