Description
The invention relates to a knife with a spiral-shaped cutting edge extending over approximately 150 to 360°. This is divided into sections with different radii.
A knife of this kind, known from DE 38 33 596 C2, is used expressly for cutting material into slices which tends to elastic and/or plastic deformation when a certain cutting pressure is exceeded. The knife is arranged on a shaft aligned perpendicular to its plane and is driven by this shaft about an axis of rotation which is essentially parallel to a longitudinal axis of the material. The cutting edge of the known knife is divided into three sections, of which the first and third sections each run with a radius increase in the direction of knife rotation which is smaller than a radius increase of a second section of the cutting edge arranged between them.
Mit dem bekannten Messer wird die Aufgabe gelöst, bei konstanter Messerdrehzahl die Vorschubgeschwindigkeit des jeweils aktiven Abschnitts der Schneidkante der jeweiligenThe well-known knife solves the problem of maintaining the feed rate of the active section of the cutting edge of the respective

The feed rate is therefore increased or reduced inversely proportional to the tendency of the material to be cut to deform.
If a product to be sliced consists of a part that is prone to deformation and a part that is rigid, such as a cutlet made of meat and bone, the knife described above is unsuitable for processing it. As a rule, the knife first cuts through the part of the product that is prone to deformation, for example the meat of the cutlet, and then, as this part of the product decreases and the rigid part of the product increases, for example the bone, it finally cuts through only the latter. The rigid part of the product also does not tend to deform when it leaves the knife, as is the case with boneless meat and sausage products, for example, which occurs to a greater extent at this cutting stage and leads to geometrically irregular slices.
The invention is based on the object of designing the known knife described at the outset in such a way that it is also particularly suitable for cutting goods into slices when the goods, such as a chop, consist of inherently deformable and rigid components, for example meat and bones.
To solve this problem, a knife of the generic type mentioned in the preamble of claim 1 is used, which according to the invention has the features specified in the characterizing part of claim 1.
The maximum increase in radius of the first section of the cutting edge in the direction of rotation means that no consideration is given to the tendency of the material to deform when the knife penetrates, as is the case with the knife according to DE 38 33 C2, which has a smaller increase in radius over a first section. The rigid part of the material counteracts the inherent tendency of the remaining part of the material to deform and keeps its deformability within narrow limits by connecting the different parts of the material to one another. The subsequent toothed section of the cutting edge with a minimal increase in radius sets the type and speed of the cutting process to the rigid part of the material and cuts through it with a saw cut, which prevents the rigid part of the material from splintering and only produces a fine-grained powder, depending on the design of the toothing.
The slices separated from a strand of material using the knife according to the invention have a smooth cutting surface over the most important part of their area consisting of soft material and an equally smooth sawing surface over the most important part of their area consisting of hard material.
In order, for example, to divide a chop into slices and thereby separate as large an area of meat as possible with the untoothed section of the cutting edge and also as large an area of bone as possible with the toothed section of the cutting edge, one embodiment of the invention provides for the toothed section of the cutting edge to extend over an angle of 80 - 190°, preferably 165°.
A knife designed according to this configuration leads to an optimal use of the two differently designed cutting edge sections for chops with standard cross-sectional dimensions.
The format of the knife is generally kept as small as possible for both technical and economic reasons. Regardless of the size of the angles over which the non-toothed and toothed sections of the cutting edge extend, the length ratio between the non-toothed and toothed sections of the cutting edge also varies due to the different increases in radius.
For processing chop strands of standard cross-section into chop pieces, it was found through tests that if the total length of the cutting edge is less than 600 mm, the length of the untoothed and toothed sections should be approximately the same and if the total length of the cutting edge is more than 600 mm, the length of the toothed section should be more than half the total length of the cutting edge.
If the knife is designed accordingly, meat and bones are largely cut by the cutting edge section intended for this purpose.
Bei einem entsprechend ausgebildeten Messer räumen die Schneidkantenzähne das Knochenmaterial in Messerdrehrichtung aus dem Weg so wieIt is therefore clear that with a knife of a particularly large format, the toothed section of the cutting edge can also be chosen to be particularly large and, as a result, the increase in radius can be kept particularly small. With a suitably designed knife, the cutting edge teeth clear the bone material out of the way in the direction of knife rotation, just as

das Messer in den Knochenbereich vordringt. Die erforderliche Antriebskraft des Messers und dessen Beanspruchung sind entsprechend gering.the knife penetrates into the bone area. The required driving force of the knife and the stress on it are correspondingly low.
The drawing shows an embodiment of the knife according to the invention in a side view:
A spiral-shaped knife 1 sits on a drive shaft 2, which is arranged parallel to the longitudinal extension of a magazine 3. With each of its revolutions, the knife 1 covers the entire cross-section of the magazine 3, in which a strip of cutlet 4 is axially displaced by feed devices (not shown).
In the position of the knife 1 shown, it has already passed through part of the opening cross-section of the magazine 3 with an untoothed section of its cutting edge extending over 165° and has thereby severed a significant cross-sectional area of the chop meat 6 in accordance with its maximum increase in radius. The cutting edge of the knife 1 hits a bone 7 of the chop 4 and, as the rotation continues, passes through the cross-sectional area 9 of the magazine 3 shown in hatched form with a toothed section 8 extending over 165°.
In the case of chops 4 with standard cross-sectional dimensions, the extension of the bone 7 does not extend beyond the hatched cross-sectional area 9 of the magazine 3, so that the bone 7 as a whole is severed exclusively by means of the toothed section 8 of the cutting edge.
Der verzahnte Abschnitt 8 der Schneidkante verläuft mit einerThe toothed section 8 of the cutting edge runs with a
