Die commercielle Methode der Darstellung von Hydrosulfit gründet sich auf die Einwirkung von Zink oder einem anderen passenden Reductionsmittel auf Bisulfitlösung, d. h. die genannten Substanzen werden mit einander gemischt und umgerührt. Diese Reductionsmittel wirken aber nicht auf Mono- und Metasulfite, und es folgt daher, dafs die Reaction, wo Bisulfit angewendet wird, nur mit dem Theile des Bisulfites stattfindet, der als wirkliches saures Sulfit (z. B. NaHSO3) vorhanden ist. Und diese Methode der Darstellung ist nicht nur auf lösliche Sulfite, Metasulfite und Bisulfite anwendbar, sondern überhaupt auf alle Salze der schwefligen Säure, die durch Schwefelsäure zersetzt werden und schweflige Säure entwickeln. Wo man es mit derartigen unlöslichen Verbindungen zu thun hat, werden dieselben mit Wasser aufgeschlemmt. Die Concentration der Sulfitlösung oder Mischung wird vortheilhaft so gehalten, dafs dieselbe von 10 bis 20 pCt. totale schweflige Säure enthält. Das Gefäfs, in dem die Reaction ausgeführt wird, ist mit einem Rührwerk versehen, und zum Zuflufs der Schwefelsäure ist ein Rohr angebracht, das nahe bis an den Boden geht, so dafs die sich entwickelnde schweflige Säure von der darüber stehenden Schicht absorbirt wird.
