Abstract

La presente invenci¨®n se refiere a una bebida a base de malta fermentada sin alcohol o con baja graduaci¨®n alcoh¨®lica que tiene un contenido alcoh¨®lico no mayor a 0,7% en volumen, caracterizado por una relaci¨®n y ¡Ý A Xb donde A=0,25 y b=1,5 y donde x es la relaci¨®n entre los extractos no fermentables y los extractos reales, donde el extracto no fermentable es el valor del extracto real menos el contenido total de az¨²cares reales, que consisten de fructosa, maltosa, glucosa, maltotriosa, y sacarosa e y es la relaci¨®n entre el contenido combinado de maltopentaosa, maltohexaosa y maltoheptaosa sobre la cantidad total de az¨²cares principales, donde los az¨²cares principales consisten de fructosa, maltosa, glucosa, sacarosa, maltotriosa, maltotetraosa, maltopentaosa, maltohexaosa y maltoheptaosa. Tambi¨¦n se refiere a un m¨¦todo para producir una bebida a base de malta fermentada sin alcohol o con baja graduaci¨®n alcoh¨®lica que comprende: preparar un mosto (23) de fermentabilidad no mayor a 29% preferentemente, no mayor a 25%, m¨¢s preferentemente 20% como m¨¢ximo y fermentar el mosto preparado en un tanque de fermentaci¨®n (4) mediante un proceso de contacto en fr¨ªo.
