Abstract

Un proceso para preparar una bebida a base de cereal, comprendiendo el método: ~ proporcionar malta o granos de cereal sin maltear; ~ macerar dicha malta o granos de cereal sin maltear para solubilizar los azúcares fermentables allí, comprendiendo la maceración: - una primera etapa en la cual la malta o los granos de cereal sin maltear son expuestos a actividad de proteasa y opcionalmente a actividad de glucanasa, llevándose a cabo la primera etapa en un intervalo de temperatura A; - una segunda etapa posterior en la cual la malta o los granos de cereal sin maltear son expuestos a actividad de beta-amilasa y alfa-amilasa llevada a cabo en un intervalo de temperatura que inhibe la actividad de proteasa de la primera etapa; - filtrar la malta triturada o los granos de cereal sin maltear para obtener un mosto; - fermentar dicho mosto para obtener la bebida a base de malta; donde el proceso comprende la adición de raicillas de malta al mosto, caracterizado porque dichas raicillas de malta se agregan a la malta o los granos de cereal sin maltear durante la segunda etapa del proceso de maceración en la que se inhibe la actividad de proteasa.
